The picture is a version of Salmon Croquettes. They were my favorite growing up with a huge sq**rt of ketchup! My version is a crispy salmon patty with dill, lime, spicy horseradish remoulade, brunoised cucumbers and tomatoes and salty capers.
Crunch, acid, heat, salty all work together for a great bite!

I am Chef Debra Workman. I am in Bridgeport Texas. I have entered a contest called FavChef with Chef Carla Hall. I entered this contest in hopes to use the prize money to make some repairs and reopen my restaurant Gather with Chef Debra. You can vote for free every day.
