Rootstalk is closed tonight, but dinner is still handled — Radicato is a few blocks down Main and serving from four o'clock on.

If you take our advice, a few dishes are loving at Rad right now: the Burrata with Palisade peaches and prosciutto, the Trofie Nerano with Costata Romanesco zucchini and lemon verbena, and the Garganelle with fennel sausage and Olathe sweet corn. All of it is exactly what late August should taste like.

A summer entrée that doesn't hold back 🌽

The strip comes from Fitch Ranch, a Colorado family operation ranching Black Angus across 20,000 acres on the Western Slope 🥩 Their cattle eat spent grain from Breckenridge Distillery, which is about as close to home as sourcing gets.
