Montana native and owner Brett Evje always dreamed of opening a classic steakhouse in the heart of downtown Bozeman. His vision of a wood-fired hearth and a beef-forward menu draws inspiration from his childhood. Specifically, his fond memories of spending time with his maternal great-grandfather J.W. Heist a cattle rancher. ⁠

Joseph Walter (J.W.) Heist, the great-grandfather to co-founder Brett Evje, was born in 1896 in Electric, Montana to Solomon and Mary Ellen Heist. They homesteaded in the Cinnabar Basin just outside Yellowstone National Park and later moved to Manhattan to raise prize polled Hereford bulls.⁠
J.W. Heist Steakhouse pays tribute to ranchers’ continued legacy of excellence, hard work and Montana values. ⁠

We are excited to announce Ryan Dorn as our new Wine Director at J.W. Heist.

A WSET Level 3 and French Wine Scholar graduate, Ryan brings more than six years of sommelier experience, including over three years with J.W. Heist. His knowledge, warmth, and love of hospitality have made him an incredible part of our team and guest experience.

Ryan’s passion for wine has taken him through Burgundy, Champagne, the Loire Valley, Napa, Sonoma, Willamette Valley, and the Okanagan Valley. Along the way, he has come to see wine as more than what’s in the glass. It is a connection to history, place, culture, and people.

Education and mentorship are central to Ryan’s approach. Since returning home to Bozeman, he has welcomed more than 70 industry professionals into his home for wine and spirits education, creating space for curiosity, generosity, and shared passion.

Staff Spotlight! ✨️⁠

A standout in both the J.W. Heist and Plonk kitchens, Brandon Swenson is a rising talent to watch. He has been part of our team for three years and recently graduated from the Gallatin College MSU Culinary Arts program. Brandon’s culinary philosophy centers on culinary simplicity and the deep, often overlooked connection between food and emotion. ⁠

Last summer, Brandon interned at the three-Michelin-starred restaurant JAN in Munich, Germany. He will return there for another three-month internship this summer, the only American to be asked back for a second season, before rejoining our team in the fall.⁠ We wish Brandon the best of luck and we can't wait to watch his career grow.⁠

For more than three years, Jennifer White has played an integral role in shaping and elevating our wine program. Her passion, professionalism, and dedication have helped create a program rooted in excellence, hospitality, and genuine wine culture.

From developing our magnum glass pour offerings to coordinating winemaker dinners throughout the year, Jennifer’s impact has been felt in every aspect of our program. Her leadership, knowledge, and care for both our team and guests will certainly be missed.

We are incredibly grateful for all she has contributed over the years and excited for her next chapter. Jennifer and her partner Scott will be heading to Cameron, Montana, where they will be part owners and operators of the Grizzly Bar.

Thank you, Jen, for everything you’ve brought to our team. We wish you continued success and all the best in this exciting new venture.
