Meet Leo Mamaril Jr., General Manager at Driftwood since 2019.

Leo got his start in Driftwood’s kitchen before moving to the floor, and some longtime regulars still remember him for two desserts he created back then, the Chocolate Waffle and the Mango Donuts. People still ask when they’re coming back.

Before Driftwood, Leo spent time at Blue Hill at Stone Barns, where he learned that hospitality starts long before the food hits the table. That shows up in the small stuff now, napkins aligned, chairs straight, every table set with intention. Guests may never notice, but they feel it.

One thing people don’t know: if Leo has an AirPod in, he’s probably not listening to music. Every call to the restaurant routes straight to his ear.

Co-owner, manager, and wife to Chef Jimmy Everett, Ilia has been part of the Driftwood story since long before the doors opened.

Ilia grew up in San Juan, Puerto Rico, where she first discovered a passion for the industry. She went on to study culinary arts at The French Culinary Institute in New York City, working her way through the industry on both sides of the pass.

Long before Driftwood existed, she and Jimmy were working side by side in kitchens and dining rooms across New York, Hong Kong, and Los Angeles. When they decided to open something of their own, the goal was simple: build a restaurant that reflected everything they had learned along the way.

Ask her what to order as a first-time guest and she’ll point you straight to the fish. “You can’t get fresher fish than at Driftwood.”

As for what a perfect night at Driftwood looks like to her? It’s not complicated. Guests laughing, and a casual “see you soon” on the way out the door.

Off the clock, Ilia is a full-time baseball mom to a very talented son, a job she says is every bit as intense as running a restaurant.
