These ingredients are used to create scratch-made food, including pasta, bread, pastries, sauces, jus and more. Due to the handmade nature of the menu, dietary restrictions are easily accommodated, and a variety of vegan, vegetarian and gluten-free dishes are offered. The restaurant’s popular Tableside Service presents a modern and interactive take on a time-honored dining tradition, with a number of signature dishes prepared in dramatic tableside fashion, such as shrimp scampi, grass-fed beef on Himalayan rock salt, Café Diablo, and more. Weekly offerings at Jill’s Restaurant, such as its Ooh La La Lunch, Vegan Fridays lunch buffet, Monday night vegan tasting menus and Sunday brunch draw not only hotel guests, but also Boulderites and locals from neighboring towns. The beverage program, led by Beverage Director Bryan Amaro, offers a curated selection of wines, local Colorado beer and spirits, alongside craft cocktails that incorporate ingredients from the on- site garden.
