This season asked a lot from our farm partners.
An early freeze wiped out 100% of this year’s stone fruit crop at Steve Ela and Regan Choi on the Western Slope, a partner we’ve worked with for Chef Kevin’s entire career. Up in the San Luis Valley, Colorado Catch LLC is raising striped bass through sustainable aquaculture in one of the driest parts of the state, because when water is scarce, you innovate or you don’t grow at all. At Know Your Farmer , that same water-smart thinking means hydroponic tomatoes instead of thirsty field crops. Every farmer and rancher we work with, Munson Farms , Billy Goat Hop Farm , Root Shoot Malting , Rock River Bison , Bluebird Organic Fruit Co. , Tuxedo Corn Company , and more spent this year adapting to a Colorado growing season that didn’t make it easy.
That’s exactly why we wanted to slow down and tell their stories this Colorado Month. When our farmers are able to produce and share, we get to do what we love and we don’t take a single harvest for granted. Because they made it possible, we’re able to serve and deliver quality produce from their farm to your table. That’s what Colorado month is all about. ♥️
