For one night, the Frasca kitchen became a meeting place for two distinct culinary perspectives.

Chef Val Cantu and the Californios team traveled from San Francisco to cook alongside Chef Ian Palazzola and our team, creating a dinner shaped by conversation, curiosity, and the energy of working together.

As the first restaurant in the world to earn three Michelin stars for Mexican cuisine, Californios continues to expand the possibilities of fine dining. Experiencing Val and his team’s vision, precision, and generosity up close was a privilege.

Twenty two years ago, Frasca opened with a deep respect for the traditions of Friuli-Venezia Giulia and a belief that great hospitality has the power to bring people together.

Since then, we’ve served hundreds of thousands of guests, introduced countless people to the wines and cuisine of Friuli, celebrated major milestones with our community, welcomed team members who have gone on to lead some of the country’s best restaurants, and continued to learn and evolve with every season.

The restaurant has changed over the years, but our purpose has not. Every menu, every bottle of wine, and every guest who walks through our doors is part of a tradition that began 22 years ago and continues today.

Sourced from Australia and lightly cured with salt and sugar, Hiramasa Amberjack is sliced and dressed in bright lemon vinaigrette and rests in a warm lovage brodo. The brodo is crafted from local Esoterra lovage, chives, and amberjack bones, and garnished with turnips and vermouth-brined celtuce.
