Happy Amperfans!

Have you ever thought about how Sumatra gets its taste? It’s not only because of the region and elevation, it’s also because of the unique way it is processed!

This process is called ‘wet-hauling’ or ‘Giling Basah’ in Indonesian. The coffee cherries are pulped (removed from the cherry) and set out to dry, just like other methods. The difference is that while other processes leave the parchment (a thin layer to protect the green bean) on as the bean dries, the parchment on Sumatra beans is removed early on. Stripping the parchment so early slows the drying process resulting in a green coffee bean that is more saturated with water than other origins. This produces a coffee with less acidity and more unique flavors!
