Ten years ago, our team loaded up an RV and drove nearly 6,000 miles around the country to meet the people behind the ingredients in our kitchens. We called it Himmel Hits the Road. I’ve been thinking a lot lately about one stop in particular: Brawley, California, home of Brandt Cattle Co. Bill and Sue Brandt opened their home to our team and fed us like family. Their son (and my good friend) Eric walked us through every corner of the ranch with the kind of pride and knowledge that only comes from a lifetime of doing it right.

That visit reminded us that the best partnerships aren’t just about product. They’re about people. Today, we’ve now been working with Brandt for twenty-five years, and we’re still proud to call them our partners. One ranch, one family, no hormones, no antibiotics, no shortcuts. Their beef is a staple on our menus across the group, and especially at and .

This time of year, I find myself slowing down and thinking about where our food actually comes from: the ranchers, the farmers, the fishermen who make what we do possible. We’re not renting another RV just yet, but we are coming back to our roots. This year, we want to bring these stories to our guests and remind everyone that behind every great dish is a relationship built over the years. Stay tuned, there’s much more to come.
