I’ve been told a few times in my life that cooking isn’t rocket science. And while thats true, what it is, is an act of love and humility, a practice of alchemy, creation of harmony between few to several ingredients, that sometimes fit together, and other times are so different, getting them to work together is seemingly impossible, just like ppl. Sometimes the best combinations are the ones that are the hardest to bring together harmoniously. Both take restrain, control and finesse to achieve. And when it happens, boy is it special. This is the thrill we chase, what fuels us. The manipulation of ingredients, control of the heating elements and celebration of each ingredient. The kitchen is our play ground where our imaginations create.

I think that’s really the secret of a great dish. It has to start with a curiosity and then comes the work, then the magic. . Just like anything else you learn to master, it takes repetition, patience and knowledge of ingredients. Eventually, do it enough it becomes instinctual.
And That’s when it gets boring and you decide you need to learn how to recreate ALL the dishes from your favorite Thai restaurant. 😆

Here’s one of my favorite versions of the shrimp scampi!

And Happy Mother’s Day to our Mother, Gera, who is enjoying her Day, far away from all of us, in Italy.
Her and my Dad are the ones who taught me everything I know about cooking, and The inspirations behind Figaro’s❤️🙏. domssausage
