This is an Italian pork roast called Porchetta. The pic is just for visual reference, I don’t have a pic of ours. Anyhow this is our special tomorrow. It’s pork belly covered in garlic, fennel and lemon zest, a brined pork loin is added to the middle, rolled up and then smoked. We will shave it thin onto a sandwich roll with provelone…served with fries or a side salad tomorrow
