Big things are happening at Carmella’s!!!

We’re excited to share that the major electrical infrastructure upgrades to the building have now been completed, marking a huge milestone in bringing Carmella’s to life. Construction is moving into the final stages, and most of our equipment has already arrived and is being moved into its new home.

As we get closer to opening day, we’ll soon begin hiring for a variety of positions, including managers, servers, pizza cooks, kitchen assistants, and food runners. If you’re interested in joining our founding crew, keep an eye on our social media pages for application details and hiring announcements.

Our sights are set on a July grand opening, and we can’t wait to welcome everyone through our doors. Thank you for all the encouragement and support as we bring this project across the finish line. More updates coming soon!

We know you've all been eagerly following the progress of Carmella’s Pizza Parlor, so we wanted to share a meaningful update on where things stand with respect to getting up and running.

As we reported earlier, our project encountered an unexpected delay tied to a major electrical infrastructure issue affecting the entire building. The good news is that the building owner, electric company, and the City of Boerne have all been working together on a plan to upgrade the property to meet the needs of all current and future tenants — and things are finally moving in the right direction.

In fact, the contractor is scheduled to begin moving equipment onsite by the end of this week, and next week we begin preparations for the upgrade itself.

This is a major project. During installation, the entire building will temporarily operate on generator power for up to a week while the new electrical system is put into place. It’s a complicated and highly disruptive process, but it’s also the final major hurdle standing between us and opening our doors.

Barring any further unanticipated problems, by the beginning of June we should have full permanent power restored and be ready to begin the final stretch: occupancy certification, health inspections, fire inspections, and all of the final approvals needed to open.

Then the fun begins! 🍕🍷

We’ll move into setup mode, train train train!, dial in every detail, and begin soft-opening in preparation for our grand opening and celebration, which we’re currently estimating for late June or early July.

And trust us — we're just as anxious as you are to start serving up pizzas! We’ve been putting this extra time to good use behind the scenes, though. When Carmella’s opens, you can expect:

🍕 Detroit-style specialty pies
🍝 House-made meatballs. Italian sausage. and sauces
🍷 A casual wine-and-beer bar
🎮 A few classic arcade games
❤️ A warm, old-school pizza parlor atmosphere built around family, community. and old-fashioned fun

Carmella’s is part of the 28 Songs Brewhouse + Kitchen family, and just like 28 Songs, our goal is to create a place that feels welcoming, comfortable, and full of life — where friends and families gather around great food, good drinks, and meaningful time together.

We truly appreciate everyone’s patience, encouragement, and excitement throughout this process. We’re getting close now — and we cannot wait to welcome you inside! 🍷🍕

The energy around Carmella’s has been incredible—and we feel it every day. Thank you for the excitement, the messages, and the support. It means a lot to us as we prepare for what’s sure to be something amazing!

We want to be transparent with you: our opening has been delayed due to a necessary upgrade to the building’s electrical capacity. It’s one of those behind-the-scenes things that has to be done right to make sure we can deliver the experience you’re expecting.

The good news is that the building owner, the electric company, and the City of Boerne are all working together with us to move us forward as quickly as possible. Progress is happening.

Right now, we’re aiming for a June 1 grand opening. We’ll keep you updated as we get closer. In the meantime, stay tuned for news and announcements! In the next couple of weeks, equipment will start arriving, hiring notices will go up, and we’ll post menus and photos!

Back in the fight!

After eight years of loyal service at Z’s Pizza, this old Hobart P660 floor mixer is reporting for duty once again—this time at Carmella’s!

This isn’t just a piece of equipment. It’s a veteran of the line. An 853-lb workhorse that’s weathered the rush, stood fast through the busiest of times, and helped turn out countless pies with consistency and grit. She’s logged her hours like a seasoned ship in the fleet—tested, trusted, and never backing down when the orders came in heavy.

We’ve hauled her out of retirement, given her a fresh inspection, and recommissioned her for active duty. The mission remains the same: great dough, made right, every single time.

Some things don’t need replacing—they just need a new port and a fresh crew.

Welcome aboard, old friend. ⚓️🍕
