We have something new! Chef Adam has just introduced our first-ever thin-crust pizza! This is a really big deal for us in several ways.
First, the way we make and cure our dough required us to develop an entirely new process for this new crust. The key was to maintain the unique flavor we have nurtured since we made our very first pizza. To do so, with a thinner crust, we changed the curing time and rebalanced our ingredients. After several taste tests, we had what is now our finished product.
Second, we realized, in the process of developing the thin crust, that our thin crust would not be the artisan bread that crumbles at first bite, nor the New York thin crust that sags and folds. While both of those can result in great pizzas, they would not be Ianazone's pizza with Ianazone's flavors. So, our thin is not skinny-thin, but firm-thin with a crispy cooked outer crust.
Third, during the taste testing stage, we decided to use Old World Pepperoni instead of our classic pepperoni. The Old World version is slightly spicier, and it curls when cooked. It gives the pizza a crunch without flaking and a taste that instantly awakens your senses.
Fourth, in a really bold move, we put the toppings on top of our thin-crust instead of our norm, toppings first, then cheese on top. This contributes to the more crispy texture and bite than on our Classic pizza.
We are excited about this pizza and hope you will try it soon (Chef Adam lives on positive reports). For now, it is a limited-time speciality pizza, an offering of a new, lighter summer pizza with great taste.
