No. We did not change the recipe. The market for dairy products has been up and down and for a while and in December, we couldn’t find our regular mozzarella or provolone for our frittata. For a while, had to use the more expensive stuff we could hardly afford. You can taste why it’s a bit more expensive. It’s richer, creamier, more buttery, and almost nutty. Fortunately, we have an awesome purchasing agent and he’s been getting us the expensive cheese for the lower price for months now. You’re awesome, Chris!

Cool enough for a sweater is cool enough for soup! Chili Crisp Chicken and Corn Soup today! We made this earlier in the year and thought it was different and delicious enough to try it again. # eatlocalkc

We have the best neighbors in downtown Blue Springs. Twyla from America’s Community Bank always brings us potted plants as gifts on the holidays. Shop local, shop small, support small businesses! Sara is working on a big pot of Tomato soup and a few desserts for the refrigerated case.

When your kitchen is minimum, but your output is maximum you find ways to make the space work. Sara has returned to baking duties as our baker has opened her own shop with family in Lexington, Missouri. This is how Sara rolls…quiche crusts. It was below 65°F when we left for work at 6:30 and that was excuse enough for us to make Loaded Baked Potato soup today. It should be ready by noon.

Everyday is Earth Day at Bean Counter Café and this three-ring binder is one of the reasons why. Not only do we do the obvious and easy things like recycle glass and metal, we also compost coffee grounds and kitchen scraps. Over the years, we’ve kept literally tons of material from being entombed in a landfill and turned it into rich usable top soil.

But this 3 ring binder, one of three of its kind, contains all of our recipes and baking instructions collected and collated over the last 15 years of being in the restaurant business. They represent our mission statement that if we can grow it or make it ourselves, not only will it taste better it will also lessen our negative impact on our environment. That is why we make our own sauces, soups, side dishes, dressings, pickles, gravy, and bake fresh every day. Eggs come from a local farm, seasonal vegetables and herbs are purchased locally and we do everything we can to reduce our footprint on this green Earth.

We always tell ourselves it’s not easy being green. But doing the right thing is seldom the easy thing.

I’ve had a sore throat and have been wanting some homemade chicken soup. Sara has been wanting to try this new soup recipe. Serendipitous soup situation led to this; Chili Crisp Chicken and Corn soup. It’s very good. I’ve had only a taste and my throat feels better already.

We are working on Roasted Butternut Squash Soup from scratch. It’s one of my winter time favorite soups. It’s loaded with vitamins and minerals. Simple ingredients start with what you see here; squash, butter, kosher salt, coarse black pepper, onion, apples and herbs. It’s a bit like tomato soup, but not tangy, more sweet. Want it vegetarian? Order it without drizzle of cream on top. Also topped with toasted pumpkin seeds.
