Alps Teas has just set up a Swiss Alpine Fondue Party spread at Black Bear Antiques for the Valentine's weekend. Featuring Alpine Fondue Cheese, so yummy and easy to make just put a cup of beer or wine in a fondue pot, sprinkle handfuls of fondue cheese and 10 minutes later sit diwn and start dipping . Bake your own bread for your fondue party, using one of our super easy rustic bread mixes, the night before pour bread mix and yeast packet in a bowl add one and a half cups of water stir and form into a ball and let rise overnight, the morning of your party place bread dough on floured surface and form to fit into a covered bread pan bake for 45 minutes will smell heavenly while baking. For dessert we have a chocolate fondue kit featuring Maxims chocolate from Paris. Very simple to make a chocolate fondue sauce using Alps Teas kit just warm a half cup of heavy cream with the chocolate truffles heat low and blend with the mini jar of French chocolate hazelnut spread and pour into fondue pot and start dipping. The round Fondue Set with 4 forks is $19.50 the square Fondue Set with 2 forks is $29.50.

Sip a Cup of History. Do you know what teas were thrown in the harbor during the Boston Tea Party ? Dutch East Indian and Bohea were both Colonial teas. Bohea tea was the largest tea importer during colonial times. During the Boston Tea Party 242 chests of Bohera tea were thrown over into the harbor and distroyed. We are featuring some of these Colonial Historial Teas. Come stop by Black Bear Antiques and visit Cheryl she is sampling these teas for us in her new coffee and tea tasting booth. We also have some great housewarming items Savory Party Bites with apricot jam to dip or go over cheese, easy to make just add sour cream and bake and let the 4th of July celebration begin!

Looking for something special for Dad this weekend. How about our Happy Camper Tea Party goodies. This tea party was Inspired by three different Trail Teas, freeze dried Roasted S'mores, Bear food snacks and Hiking Hummes mix which can be made on the trail with a water bottle. Dad deserves a special day with this unique Tea Party made just for him. Just in time to hit the hikimg trails to visit some of our beautiful mountain trails and waterfalls.

"Duck Pond Cake🎂🦆" or a "Nature-Themed Cake."

Recipe in Grams:

Cake Base:
250g all-purpose flour
200g granulated sugar
100g unsalted butter
2 large eggs (~100g)
240ml milk (~240g)
10g baking powder
5g vanilla extract
2g salt

Buttercream Frosting:
500g unsalted butter
1000g powdered sugar
10g vanilla extract
60ml milk (~60g)
Food coloring (green, blue, red, white, brown)

Decorations:
Fondant or modeling chocolate for ducks, trees, mushrooms, rocks, and flowers
Piping bags and tips for grass and other details

Instructions:

1.Bake the Cake:
-Preheat oven to 180°C (350°F). Grease two 8-inch cake pans.
-Cream butter and sugar until fluffy. Add eggs and vanilla.
-Mix flour, baking powder, and salt separately. Gradually add to wet ingredients, alternating with milk.
-Divide batter into pans and bake for 25-30 minutes. Cool completely.

2.Prepare Buttercream:
-Beat butter until creamy. Gradually add powdered sugar.
-Add vanilla and milk, beating until fluffy.
-Divide frosting into bowls and tint with food coloring.

3.Assemble & Decorate:
-Level cakes, stack with frosting between layers.
-Cover with light green frosting. Pipe grass and plants.
-Create a blue pond on top. Add fondant decorations for ducks, trees, mushrooms, and flowers.

Coronation Chicken Finger Sandwiches

Originally called “Chicken Elizabeth”, this recipe was invented by Constance Spry and Rosemary Hume, the principals of the Cordon Bleu Cookery School, and was developed for Queen Elizabeth II’s coronation in 1953.

With hints of the British Raj, the recipe is a peculiar mix of sweet and savory. The coronation chicken recipe was invented as a post war solution for the Queen's coronation banquet on June 2, 1953 when 350 foreign dignitaries were in attendance.

With tender chunks of chicken coated in a mildly spiced sauce with mayonnaise, it soon became one of the most popular dishes of 1950s Britain and is still served as part of a traditional afternoon tea in hotels and restaurants across Britain.

In fact, finger sandwiches filled with Coronation Chicken are a firm favourite for afternoon tea at Buckingham Palace and at Balmoral Castle, where Queen Elizabeth II spent her summers.

Recipe for the coronation chicken (Serves 6)

1 tsp curry powder
4 tbsp mayonnaise
1 tsp crème fraîche
1½ tbsp mango chutney
1-3 tbsp sultanas
100g or 3/4 cup cooked roast chicken, shredded
(optional spring onion for a light onion flavour and flaked almonds for a nice crunch)

Put the curry powder in a pan and heat for a minute or two until you can smell the aroma of the spices. Tip into a bowl and add the mayonnaise, crème fraîche, chutney, sultanas and plenty of seasoning. Stir in the chicken. If the mixture is very thick, stir in 1-2 tsp water.

If using sliced bread, spoon a little coronation chicken onto one slice of the bread, cover with the second slice, trim the crusts and cut triangles or rectangular and serve. You can use mini rolls, wraps or pitta as a variant.
