We had the honor of welcoming Carter Smith along with his friends and family to Janko’s for a special evening centered around the people behind Carter’s Cut and the mission behind it.

Everyone gathered around the table to enjoy Carter’s Cut while helping bring greater awareness to XLH (X-linked hypophosphatemia), a rare genetic disorder that has touched Carter’s family personally.

Everyone’s wondering… “What does Pittsburgh Style mean?!” 🥩🔥

Pittsburgh Style steak is seared at an extremely high temperature, creating a deeply charred, almost black exterior while keeping the inside rare (or even blue rare). It’s also known as “Black & Blue” — black on the outside, blue on the inside.

And where did it come from?? 👀

Legend has it that Pittsburgh Style dates back to Pittsburgh’s steel mills, where steelworkers supposedly cooked their steaks against the blazing-hot surfaces of the furnaces during their short lunch breaks. The intense heat would char the outside almost instantly while leaving the center beautifully rare.

Today, “Pittsburgh Style” simply means cooking a steak over extremely high heat to achieve a dark, flavorful crust while leaving the center rare to medium-rare.
