Texas Voodoo Cowboy Pasta Salad

Creamy, smoky, zesty, and loaded with pasta, corn, peppers, cheddar, pickles, jalapeños, and ranch-style dressing, this cowboy pasta salad is bold enough for any Texas table. 🤠🌽🥒

🛒 Ingredients
• 12 oz rotini pasta
• 1 cup corn, drained
• 1 cup black beans, rinsed and drained
• 1 cup diced dill pickles
• 1 cup shredded cheddar cheese
• 1/2 cup diced red bell pepper
• 1/3 cup diced red onion
• 1–2 jalapeños, finely chopped
• 1/2 cup mayonnaise
• 1/2 cup sour cream
• 2 tablespoons pickle juice
• 1 tablespoon ranch seasoning
• 1 teaspoon smoked paprika
• 1/2 teaspoon garlic powder
• 1/4 teaspoon black pepper
• 2 tablespoons chopped cilantro or parsley

👩‍🍳 Directions
1️⃣ Cook the rotini pasta according to package directions until tender.
2️⃣ Drain and rinse under cold water, then let it cool completely.
3️⃣ In a large bowl, add the pasta, corn, black beans, pickles, cheddar, red bell pepper, red onion, and jalapeños.
4️⃣ In a separate bowl, whisk together mayonnaise, sour cream, pickle juice, ranch seasoning, smoked paprika, garlic powder, and black pepper.
5️⃣ Pour the dressing over the pasta mixture.
6️⃣ Toss until everything is creamy and evenly coated.
7️⃣ Chill for at least 30 minutes, then top with cilantro or parsley before serving.

❄️ Chill Time: 30 minutes
🍽️ Servings: 8 servings
