A Word From Our Executive Chef

Behind every dish at Pure & Proper is a story, a passion for the craft, and years of learning along the way. We’re proud to introduce you to our Executive Chef and share a little more about his journey through the kitchen, the mentors who shaped him, and the philosophy that guides the food we serve.

“I fell into cooking in college, working at a pizza place in Greensboro. I spent several years working in different restaurants and kitchens. Each place allowed me to build a foundation of basic skills that helped me grow.

In 2017, I ended up at Native Kitchen & Social Pub in Swannanoa, and I had the chance to dive into the culinary world on my own terms. From making my own kimchi to figuring out how to make childhood favorites I hadn’t tasted in years, my yearning to learn and grow took over.

I was fortunate to have several mentors throughout this time, but no one more important comes to mind than Jake Whitman. He showed me the importance of humility, especially in an industry that is built on bravado and ego. The dish is the star, and we are only the person plating it. We have to show the ingredients the respect they deserve and prepare them in a way that makes them shine.

My position at Pure & Proper has allowed me to truly explore the skills I have learned over the last 20 years and create things I could never have dreamed of when I first started in the industry. It has also allowed me to mentor newer cooks coming into our kitchen, like so many others mentored me and helped me grow as a chef.

My endeavor is to continue that tradition and grow myself as a chef. All I really want is to create dishes that make people smile, forget the world around them, and just exist in the moment.”

“I have been working in restaurants for 16 years, I started working in kitchens as a dishwasher right out of high school. I’ve worked in a wide variety of kitchens and learned all sorts of cuisines, including Italian, Japanese, Thai, Indian, Latin American, classic pub fare and elevated new American. I love to pull flavors and influences from all around the world, and I love finding new and unexpected flavor combinations. I love working in the Pure & Proper kitchen because it allows me to be creative and collaborate with like-minded chefs and put out beautiful and delicious plates.

The sunchoke confit dish was one of my contributions to our spring menu, and I feel like it embodies the freshness of springtime while cherishing the heartiness of winter comfort food. All the flavor concepts came from my mind, but Chef Ottey really helped turn the plate into a work of art.”

We’re so thankful for the creativity, passion, and care our chefs bring into the kitchen every single day.
