Autumn Pasta Primavera
8oz of multi-color house-made rigatoni (or store-bought pasta)
3 florets roasted cauliflower (small pieces)
1oz roasted butternut squash (small diced)
1oz roasted zucchini (small diced)
1oz red bell pepper (small diced)
Method:
• Pre-heat oven to 375 degrees
• Cut all vegetables small or same size, season with canola oil salt, and pepper, then roast for
10-15 minutes or until tender.
Goat Cheese Bechamel
4oz of belle chevre goat cheese
2 tablespoons of asiago cheese
2 cups of heavy cream
(Salt to taste)
Method:
Add heavy cream into a saucepan and slowly bring to a simmer then add asiago and goat cheese and turn the temperature to low (so that the sauce does not scald).
Honey Herb Vinaigrette
1 tablespoon of chopped flat-leaf parsley
1 tablespoon of chopped basil
1 teaspoon of crushed chili flakes
1 tablespoon of Bee Creek Farm local honey (or store-bought honey)
1 tablespoon of white balsamic vinegar
Juice of one lemon
2 tablespoons of olive oil
Method:
Once herbs are chopped add all ingredients into a mixing bowl and mix until well incorporated and set to the side.
Final Method for preparation:
• Boil 4 cups of water in a saucepan and cook pasta until al dente.
• Use a sauté pan and turn the cooktop to medium heat, add 1 tsp of canola and vegetables, sauté for one minute then add pasta, 2 tablespoons of pasta water, and 4-8 ounces of sauce. Add the honey herb vinaigrette after the pasta has been plated.
