Origin
Chef Joey Mitchell is the creative engine, flavor architect, and unapologetic culinary force behind EastWest, Mr. West, The Mayor and his latest project Otherhalf Foccaceria.
His journey began in Destin, Florida at Harbor Docks, where he prepared Gulf-to-Table specialties. During his time there, Joey learned discipline, speed, respect for ingredients, and the rhythm of a professional line. Working alongside Thai and Japanese chefs added another layer, introducing him to new techniques and flavor philosophies that would permanently shape his approach to food.

Influences
As his career evolved, so did his inspiration. The boundary-pushing world of David Chang and the Momofuku group helped sharpen Joey’s creative edge and encouraged him to think beyond tradition.
He also draws inspiration from his close friend, Chef Michael Toscano, whose Charleston restaurants — including the cult-favorite Porchetta Shop — are known for elevating focaccia sandwiches into something unforgettable.

By 2025, Joey began investing himself in the meticulous art of baking focaccia. What started as a personal challenge quickly became the inspiration behind his latest culinary concept — one rooted in craft, structure, and experience rather than convention.
