STILL KICKING!

On our return from the VT Garlic Fest last weekend, our car was hit by a van and totaled. We walked away with some hopefully minor injuries. There's more to this story, I assure you, but not the time or place. Bottom line, we're still kicking. No specials this week. Too consumed navigating the movie we now find ourselves in.

Just the usual, delicious, Whole in the Wall food. So come join us. That would be nice.

Oh! We are looking for a late 90s, early 2000s Toyota Camry, in good condition with low mileage. Let us know if one crosses your path.

We have a new batch of our famous gazpacho, a cold soup of Spanish cuisine, especially that of Andalusia. A medley of local organic vegetables: bell peppers, scallions, carrots, onions, cucumbers and fresh tomatoes.It is an ancient dish mentioned in Greek and Roman literature, although two of the main ingredients of the modern version, tomatoes and green peppers, were brought to Spain from the New World only in the 16th century.

Featuring this weekend: Pura Vida Chef salad

Growing up in Costa Rica, a land where there is so much abundance of fruit and vegetables, I lived with my grandmother, and she taught me to eat all kinds of food. Her name was Maria, and she was a fun, loving, and smart woman, who made an effort to feed us something interesting and tasty everytime.

One of those exotic flavors she used in her salads were the hearts of palm, a white vegetable that comes from the core of a palm tree. It's not only delicious, but also loaded with fiber, minerals, and vitamin B6.

Pura Vida means "pure life"
Everywhere you walk or explore in Costa Rica you will hear the words, Pura Vida. Essentially, the meaning of Pura Vida is Pure Life or simple life. This has a lot to do with the culture of Costa Rica and the attitude of the Ticos. The Costa Rican people tend to be quite relaxed and worry free.

Sitting on a bed of organic greens, organic quinoa, organic mango chunks, hearts of palm, and cucumbers for freshness.
The dressing has avocado, cilantro, avocado oil, and a touch of another Costa Rican staple: salsa Lizano.

The final touch are strips of all natural chicken or garbanzo beans for a vegan version.

Gazpacho: The ultimate soup of the summer!

Best known for being served cold, this refreshing Spanish soup draws on influences from Greece and Rome, as well as from Moorish and Arab cultures. It's made with raw vegetables such as tomatoes, sweet peppers, cucumbers, carrots, onions, scallions, and garlic, along with olive oil.

Here's Eliot's favorite way to eat it: put a small bed of organic brown rice on your plate, and top it with two sunny-side-up eggs. Very lightly warm the gazpacho, but don't cook it. Drizzle the gazpacho very generously over your eggs. Then dig in!

Enjoy it by the cup, by the bowl, or take a quart home.
