UPDATE: Hello all! I loved combing through old posts to see the Huck Truck in all her many faces—through snow and sleet and smoke and sunshine and rainbows.

After 5+ years of creativity, deliciousness, consistency, and hard work, we are preparing to sell the Huck Truck. Our ideal scenario involves someone who’d like to takeover this turnkey business that’s in a prime Bingen location, with a solid customer base and endless potential for catering.
•
Some of the details inside the mobile kitchen include:
6 burner American range w/ oven
two 24” griddle tops
24” prep fridge
48” prep fridge
3 well sink
•
Our outbuilding includes:
double door commercial fridge
single door fridge
freezer
catering equipment
•
Other useful stats include that the kitchen is certified for all food prep (no commissary kitchen needed), and is plumbed directly in (no need to move it daily to dump grey water).

We’ll be running interviews this week and next for line cooks and dishwashers, and line cooks who are also dishwashers. If you’re interested in getting buff from working your core over the dish pit, dishwashing is for you. I’d like to emphasize that we are flexible with the positions we are filling and that we will meet our needs as a business but also work with new staff to make sure everyone is happy within the parameters of the Huck Trucks operational needs. We’re seeking 1-2 staff people to work in our kitchen. The ideal person will work 25-30 hours per week and can stay organized during a lunch rush. If you don’t have experience cooking on the line, we can teach you. If you value things like simple tasks, clean cooked from-scratch-food, and working with your hands to provide tangible offerings to customers, you will enjoy this job. If you value a job with great hours and a steady paycheck + tips, you will enjoy this job. If you want to eat tacos four days a week, you will enjoy this job. We’ll be OPEN tomorrow, and back to our regular schedule of Monday - Thursday, 11:00am - 3:00pm

We’ve adjusted our menu to center our TACOS and SALADS. To be brief, we’ve stopped baking brioche and removed the sandwiches from our menu.
•
This decision wasn’t made lightly—the crispy pork sandwich was our best seller for a long time, and the burger and breakfast sandwich were delish. But just as things shift in life and in the world around us, so does the food at restaurants.
•
For the pork and falafel sandwich lovers, you can have all the same flavors on our salads by the same name. And we’ve added chicken tacos, an unofficial favorite of mine.
•
We enjoyed a different pace over the last six weeks, and we continue to evolve as people and as a food establishment. Thank you all for your support. See you this week in Bingen!
