Carter’s was started by a group of college guys, who attended The University of Southern Mississippi. Barbecue became a tradition for us. Not only did we barbecue for the typical occasions such as birthday, holidays, super bowl, but we would fire up the grill at random for any occasion, passing an exam, before and after midterms, or just because the weather was nice in Hattiesburg that day. Then came graduations and careers began, and shortly followed weddings and kids. This limited the times we could get together and barbecue. After many years of getting together to celebrate the good time, tragedy struck. The perspective of group changed with the sudden passing of Joe’s son. This brought us to the realization that we were more than just college buddies, we were family. Those moments when we were hanging out barbecuing, enjoying life shouldn’t be taken for granted. So in honor of Jayden Carter Holman we created Carter’s barbecue as a reminder that barbecuing is more than just food, its family times, fun times, and most of Great times. This is why we want to help you celebrate any time or occasion through catering our delicious barbecue to you. Family reunions, picnics, tailgating, graduations, school functions, and fund raisers you name it. We are about giving back to the community as well. Over time through countless barbecues we began to harvest the art of true Southern, Mississippi style barbecue. We began to experiment with different seasonings, herbs, and spices. We make our sauce from scratch with simple household ingredients. Through many successful and not so successful attempts we finally created out own signature rubs, seasonings, glaze, and barbecue sauces. We like to call Average Joe’s (named after Joe). Don’t let the name deceive you, there is nothing average about it. Our rubs and seasonings can help achieve any flavor profile you are looking for. Sweet and Smokey pork, savory beef, Applewood and herb chicken. And Ribs anyway you like’em from Dry rubs, sweet, and sweet heat. In combination with Average Joe’s bbq glaze and bbq sauces will send your taste buds in to overdrive. Both rubs and sauces perfectly complement each other. With roots from the MS delta and tips acquired from southern Mississippi, our Home-style sides give you every aspect of Mississippi. With a mix of MS delta soul food, to MS southern country food, with a little spice from the coast/LA. We also added a bbq twist to some of those foods such as smoked cabbage. And don’t forget about our Smoked Bar-B-Q Nachos.
