My name is Kurt, I have always loved good BBQ. Around 2012 I met Dan. His passion for BBQ and providing good food struck me. He inspired my passion for learning the craft and started me on the road to becoming a pitmaster.
I could not afford a decent (even small) smoker at the time. I talked about BBQ to the family often. On Christmas they had gotten together to buy me a small Charbroil vertical electric smoker. This worked for the next year, but I wanted to get into stick burning, so I upgraded to a bigger electric pellet smoker. As before I knew that this was not a true wood (stick) smoker, but it was playing the part. As I started to get better over the next few months, I was able to do some small catering events, and then a wedding came along. At this point I told myself that I had to get a true offset stick burner,
I went out and got a Old Country Brazos. I will tell you it was a lot different. There was (and still is) a learning curve once you make the step to offset smokers. As I learned and improved my craft, I was running out of room in the smoker for things I was getting asked to do. So instead of buying another offset smoker I decided the better option was to build my own. I designed and built my first smoker. My new baby was 1,150 LBS sitting on 13” golf cartwheels, and I could now start going out and doing street festivals. So that’s what I did.
Nobody Knew who Pure Smoke BBQ was, so the first festivals I did were for The Fraternal Order of the Eagles on Main Street in Belton Mo. Currently I am working on building a food trailer so that I may go out and share good food with more people.
One thing I’ve learned is no matter how long you have been on the path to becoming a pitmaster, you will always learn something new every time you fire it up.
And always COOK LOW AND SLOW
