Dear friend,
I want to tell you this directly: our opening at 227 Newbury Street is moving to November 1.
The permits took longer than we hoped, and construction followed them. I won't pretend that isn't disappointing. I've pictured that first morning for a long time: the ovens warming, the pastry case full, the door open to Newbury Street.
But a pâtisserie is not a thing you rush.
My grandmother taught me that with every tart she made: let the dough rest. Let the glaze set. Don't open the oven early simply because you're impatient. The waiting is part of the craft.
So we're using this time to make sure every detail is right. When we open on November 1, it will be finished... not hurried.
If you've already reserved a founding invitation, nothing changes except the date. Your 120% store credit is secure and will be distributed at the opening, usable at Belmont, Cambridge, and Newbury Street. Your party invitations, tasting, custom cake, or place on the founder's wall remain exactly as promised.
And founding invitations are still open. The extra time means there is still room to join us: 120% back in credit, with selected invitations including the pre-opening party, a custom cake, a private tasting, or a place on the founder's wall.
