Last Thursday, we gathered for an evening pairing the w**es of PÁŠXA Wines and The Walls Vineyards with a menu that moved from pan con tomate and razor clams to Ibérico pork, dry-aged Holstein ribeye, and Peruvian dark-chocolate Basque cheesecake.

Salmón Charapita

Pacific Northwest seasonality meets Japanese-Peruvian culinary influence. King salmon, a defining ingredient of the region’s waters and food traditions, is paired with earthy roasted sunchokes and rainbow potatoes that evoke the warmth and texture of the harvest.

The dish comes alive through charapita, a small, vividly yellow chile from Peru, prized for its floral fragrance and bright, lingering heat. Here, it becomes a kosho, a Japanese-style fermented condiment traditionally made with chile, citrus, and salt. Yuzu sabayon adds an additional layer of Japanese influence, balancing the chile’s warmth with delicate richness and an aromatic citrus lift.

The result is a dish shaped by migration and influence across the Pacific: Northwest salmon, Andean chile and potato heritage, and Japanese technique in conversation. Elegant, vibrant, and rooted in the exchange of coastal culinary cultures.

From exploring The Rocks District with vineyard manager Serafin Saldana and w**emaker Peter Urian to discovering the process and learning the story behind The Walls Vineyards w**ery in Walla Walla.

Together, we have crafted a dinner exploring the lasting Spanish influence on Peru’s culinary identity.

Throughout the evening, recognizable Spanish flavors and techniques—from pan con tomate and ajillo to manchego, morcilla, huevos rotos, and Basque cheesecake—come together with distinctly Peruvian ingredients and perspectives such as rocoto, botija olives, papa amarilla, sarza criolla, and Peruvian chocolate.

Each course will be paired with w**es from Pasxa and The Walls, bringing together culinary history, Peruvian creativity, and Washington w**e.

Join us on Thursday, August 27th for a night where Spain, Peru, and the Pacific Northwest meet at the table, bringing together culinary heritage, Peruvian inspiration, and Washington terroir. 🍷

La Mar Bellevue welcomes PÁŠXA Wines and The Walls Vineyards for a collaborative dinner shaped by the enduring influence of Spain on Peru’s culinary identity.

The menu traces the Spanish influences woven into Peruvian cuisine, drawing from traditions such as pan con tomate, ajillo, morcilla, manchego, huevos rotos, and Basque cheesecake, all interpreted through distinctly Peruvian ingredients including rocoto, botija olives, papa amarilla, salsa criolla, and Peruvian chocolate.

In preparation for the dinner, the La Mar Bellevue team gathered for detailed tastings to better understand the land, craft, and stories behind every bottle.

Executive Chef Karol Chang and General Manager Shawn La Sage also traveled to Walla Walla to experience the distinctive terrain of The Rocks District and meet the w**ery team firsthand.

The result is an intentional pairing experience that brings each course into conversation with the expressive w**es of Pášxa and The Walls.
