We are small town coffee lovers who decided to share the joy of single source small farm coffees with our neighbors. We have been roasting green beans for over 20 years for ourselves and now want to offer this cup of joe with others.

Here is a side by side comparison of what unroasted, or green, coffee beans look like next to roasted ones. We prefer to roast our beans to a medium roast as it allows for all of the nuances and subtleties of each unique varietal to be present. The darker you roast, the less of those unique characteristics are maintained and it all starts to taste the same. Also, the darker the roast, the less amount of caffeine in your cup.

We have exciting news to share. We will be offering two new, limited time, single origin coffees soon! One is a Mexico Organic Chiapas San Cristobal with bittersweet flavors of malt syrup, molasses, and milk chocolate. The second is an Ethiopian Organic Agaro Kenisa. With a sweeter profile, flavors of caramelized sugar and honey, fading to hints of orange creamsicle, apricot, and subtle notes of dried flowers.

These offerings will be a smaller roast so get them while they last. We will announce when they are available for purchase!

Our current roasted coffee (Guatemala Fair Trade Organic Dry Process) comes from a small holder cooperative in Western Guatemala, FECCEG, who work with indigenous groups in some of Guatemala's rural zones. They focus on organic production, and while coffee is central, their work goes beyond that. They provide technical assistance to farmers, and establish community-based programs that support primary education, and address issues like gender equity, and food scarcity.

This particular dry process lot is from farmers in the indigenous Mayan region of Quiche ("K'iche' "), one of the most densely populated Departments in Guatemala. Much of the coffee growing areas are settled along the Chuacús mountain range that runs from El Quiche to Baja Verapaz, and farms for this coffee range from 1600 to 1700 meters above sea level.

This is a dry process coffee, meaning the whole coffee cherries are dried with green seeds still inside. It takes a lot longer to dry whole cherry than the wet process method, which can lead to fruity flavors, body, and lower acidity, which is what we found in this coffee. This lot also holds Fair Trade and Organic certifications.
