Banana Cake with Cream Cheese Frosting

Ingredients

Banana Cake:

2 ½ c. All Purpose Flour

1 tbsp. Baking powder

2/3 c. Milk

4 ripe Bananas (Mashed)

2 eggs

1 ½ c. Sugar

¼ c. Apple Sauce

¼ c. Unsalted Butter

1 pinch salt

Cream Cheese Frosting:

16 oz. Cream Cheese

½ c. Butter (1 stick)

1 tsp. Vanilla

2 c. Confectioners Sugar

Instructions

Preheat oven to 350 degrees F. Grease and flour 2-8” round pans (I cut the recipe in half and used 2-6” pans instead).

To make the cake, whisk together flour, baking powder and salt – Set aside.

In the bowl of stand mixer, beat the butter and sugar until light and fluffy. Beat in eggs, one at a time. Mix in the mashed bananas. Add flour mixture alternately with the milk to the creamed mixture. Pour batter into the prepared pans.

Bake for 30 minutes until the tops are golden and a toothpick comes out clean. Remove from oven, and let cool for 5 minutes. Put pans in the freezer for 15 minutes to cool completely.

While the cakes are cooling, make the frosting. In the bowl of a stand mixer, cream together the cream cheese and butter – I get the best, fluffiest results when I use the whisk attachment. Add the confectioners sugar a little at a time. Mix until all the sugar is incorporated. Mix in the vanilla.

To assemble the cake, cut both cakes in half. Put the bottom of 1 cake on a cake stand. Layer with frosting. Put the top half of the same cake on top and layer with frosting. Do the same with the other cake. Frost a thin layer on the sides and top of the cake. Put the cake in the freezer for 15 minutes for the frosting to set. Take out and finish frosting. I also sprinkled the top of the cake with gold sprinkles to make it extra pretty :).

Grandma’s Apple Strudel

🍏 Apple Filling
Apples, peeled and sliced – 6 cups
Granulated sugar – 1 cup
All-purpose flour – 1/2 cup
Ground cinnamon – 1 tsp
🥧 Flaky Crust
All-purpose flour – 3 3/4 cups
Shortening – 1 1/2 cups
Egg yolks + water – 2 yolks + water to equal 1 cup
Granulated sugar – 1 tbsp
Salt – 1/2 tsp
Egg white (reserved) – 1
🍯 Thin Glaze
Powdered sugar – 1 cup
Milk or light cream – 2 tbsp
Vanilla extract – 1/2 tsp

📝 Instructions
Step 1: Macerate the Apples
In a large bowl, toss the sliced apples with sugar, flour, and cinnamon. Let them sit while you prepare the dough. The flour combines with the juices to create a thick, jam-like filling during baking.

Step 2: Prepare the Dough
Whisk the flour, salt, and sugar together. Cut in the shortening until pea-sized crumbs form. In a measuring cup, combine the egg yolks and enough water to equal 1 cup. Stir this into the flour mixture until a dough forms. Divide into two equal portions.
Step 3: Bottom Layer
Roll one portion of dough into a large rectangle. Place it in a 10×15-inch jelly roll pan, pressing it into the corners and slightly up the sides to form a “basket” for the apples.

Step 4: Fill and Top
Spread the apple filling evenly over the bottom layer. Roll out the second portion of dough and drape it over the top. Pinch the edges together and brush the surface with the reserved egg white. Cut 4–5 slits in the top to vent steam.

Step 5: Bake
Bake at 350°F for 45–60 minutes, until the crust is deep golden brown and the apple juices bubble through the vents.

Step 6: Apply the Hot Glaze
Whisk powdered sugar, vanilla, and milk. Pour over the strudel immediately after it comes out of the oven. Let cool completely in the pan before slicing into squares.

Decadent Death by Chocolate Poke Cake 😋❤️

Ingredients:
For the Cake:
1 box chocolate cake mix (plus ingredients listed on the box)
1 package (3.9 oz) instant chocolate pudding mix
2 cups milk
1 cup semi-sweet chocolate chips
For the Topping:
1 tub (8 oz) whipped topping, thawed
1/2 cup hot fudge sauce, warmed
1/2 cup chocolate shavings or sprinkles

Directions:
Preheat your oven to 350°F (175°C) and prepare the chocolate cake mix according to the package instructions. Bake the cake in a 9x13-inch pan.
Once the cake is baked, remove it from the oven and let it cool for about 10 minutes.
Using the handle of a wooden spoon, poke holes all over the cake.
In a medium bowl, whisk together the instant chocolate pudding mix and milk until smooth and slightly thickened.
Pour the pudding mixture over the cake, ensuring it fills the holes. Spread it evenly over the surface of the cake.
Sprinkle the semi-sweet chocolate chips evenly over the top of the pudding layer.
Refrigerate the cake for at least 2 hours to allow the pudding to set.
Once set, spread the thawed whipped topping evenly over the cake.
Drizzle the warmed hot fudge sauce over the whipped topping and sprinkle with chocolate shavings or sprinkles.
Slice and serve chilled.

Ingredients

For the crust:
• 2 ¼ cups graham cracker crumbs
• ½ cup melted butter
• 3 tablespoons sugar

Cheesecake filling:
• 680 g cream cheese, softened
• 1 cup sugar
• 3 tablespoons flour
• ¼ cup sour cream
• ½ cup mashed bananas (≈ 1 large banana)
• 1 teaspoon vanilla
• 3 eggs

Final topping:
• Whipped cream
• Sliced bananas
• Powdered sugar (optional)
• Caramel sauce (optional)



Instructions

1. Prepare the crust
1. Preheat the oven to 350°F (175°C).
2. Mix breadcrumbs + sugar + melted butter.
3. Press into a 9-inch springform pan.
4. Bake for 10 minutes, let cool.



2. Prepare the filling
1. Beat the cream cheese until smooth.
2. Gradually add the sugar.
3. Incorporate sour cream + mashed bananas.
4. Add the eggs one at a time.
5. Finish with the flour and vanilla.
6. Mix until you obtain a homogeneous texture.



3. Baking
1. Pour over the cooled crust.
2. Bake for 50–60 minutes, until the center is set.
3. Turn off the oven and let cool with the door slightly open for 1 hour.



4. Cooling & Serving
1. Refrigerate for at least 4 hours, ideally overnight.

Homemade Strawberry Cheesecake 🍓✨

A perfect trio of crumble base, soft cake texture, and creamy cheesecake layer! Topped with fresh strawberry sauce, this recipe is both refreshing and eye-catching. 🤍

Ingredients

Cake Base (Crust)
• 1 + 1/2 cups all-purpose flour
• 1/2 cup granulated sugar
• 1/2 cup cold butter (cut into small cubes)
• 1 pinch of salt

Cheesecake Layer
• 300 g cream cheese (at room temperature)
• 1/2 cup granulated sugar
• 1 egg
• 1/4 cup yogurt or cream
• 1 teaspoon vanilla

Strawberry Cake Layer
• 1 large egg
• 1/3 cup granulated sugar
• 1/4 cup vegetable oil
• 1/4 cup milk
• 1 cup flour
• 1 teaspoon baking powder
• 1 cup chopped strawberries

For the topping
• Sliced fresh strawberries
• Optional: powdered sugar



Preparation

1) Crust (Base)
1. Preheat the oven to 350°F (175°C).
2. Mix the flour, sugar, and salt.
3. Add the butter and rub it in with your fingertips until it resembles coarse sand.
4. Press into a square or round pan.
5. Bake for 10–12 minutes until very lightly browned.



2) Cheesecake Layer
1. Beat the cream cheese and sugar.
2. Add the egg and beat just until combined.
3. Add the vanilla and yogurt.
4. Pour this mixture over the cooled base.



3) Strawberry Cake Layer
1. Beat the eggs and sugar until fluffy.
2. Add the oil and milk.
3. Sift in the flour + baking powder.
4. Fold in the chopped strawberries with a spatula.
5. Spoon onto the cheesecake layer (you don't need to cover it completely, it will create a marbled effect 😍).



4) Baking
• Bake at 170°C for about 35–40 minutes.
• The center may jiggle slightly; it will set as it cools.
• Once completely cooled, let it rest in the refrigerator for 1–2 hours.



Serving

Top with fresh strawberry slices and sprinkle with powdered sugar if desired.

For the Cake:

1 cup mashed sweet potatoes (about 2 medium sweet potatoes)

1 cup granulated sugar

1 cup brown sugar, packed

1 cup vegetable oil

4 large eggs

2 ½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

1 teaspoon salt

2 teaspoons vanilla extract

1 cup chopped pecans

For the Glaze:

• 1 cup powdered sugar

• 3 tablespoons honey

• 2 tablespoons unsalted butter, melted

• 2-3 tablespoons milk

• 1 teaspoon vanilla extract

Instructions:

Preheat the oven to 350°F. Poke the sweet potatoes with a fork and bake them for about 45 minutes or until tender. Once cool, peel and mash them.

In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix until well combined. Add the eggs, one at a time, mixing after each addition. Stir in the vanilla extract.

In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped pecans.

Pour the batter into a greased 9x13 inch baking pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool slightly.
