Evangeline Parish isn't just a place where people eat Cajun food—it's a place where recipes are family heirlooms. Around here, smoked meats, boudin, rice and gravy, and gumbo aren't just meals; they're traditions passed down through generations. Some even say no parish is more proud of its gumbo and boudin than Evangeline Parish. When it comes to making gumbo for your family, do you use jar roux or make your own from scratch? That's the great debate among most cajuns!
