Abilities and talents exist in us all we just need to understand how we nurture them and bring them out. I love baking, I wish to share it at all moments. I also feel Cooking is a language, the ability to communicate love, appreciation and respect. All with no words, we are able to create memories and experiences that will remain on with folks long after the conversations and meals end. I always thought of a system where Baking by colors would be beneficial for some, where a pie chart existed and certain percentages of ingredients would create the bake as the scale dial went around the wheel. Like Blue would be Sugar and Yellow Flour, stuff like that Baking Soda could be Brown.

Sometimes the Universe just has its sights on you, it’s about balance when it comes to the cosmos so I know a good day is coming! Yesterday was crazy with the bread, I’m trying to accomplish it early in the morning so I’m not rushing for service continually ruining it by over proofing or burning the buns. The first batch I made I put too much fat in the mix and it impacted gluten development. I knew better but I still need to make my rounds so I knew I needed to be back by 2pm if I needed to do another batch. I baked them and they were not ideal lol so the next batch I baked perfectly when I returned, fluffy clouds of happiness, it’s small in the truck and I’m kinda of crazy 😂 I had full tray balancing where it ought not have been and it fell 🫣. Okay, I’ll persevere I said to myself as I remembered quickly I had extra dough in the fridge. I rolled out a fresh tray and popped them in the oven, setting a timer was ill timed and they burned pretty good. The next conversation I had with myself I’ll keep private 😂

The Forces at large are much more powerful than I can ever understand!

What a stunning 1/4lb burger, thought out from the bun to the bacon. Doing a lot with a little, that’s what we do a Fatty T’s. I love this, and I always want to be better and do better. Fatty T’s butcher compliments this burger with his craft and care. It’s the search, the right grind, the right temperature, the right beef. We use the primal cuts, we do not purchase from a supplier with 100’s or thousands of animals in your burger. Our cattle were raised in Nebraska and are bred specifically for their taste. I know we grind the beef to sell burgers but every product I’ve had from them is unreal. Looking forward to seeing you folks later at 4pm!

Thank you for allowing me another fantastic week and also for allowing me to grow over this past year. We are here for so little but we ought to do so much. I never wanna stop, and there so many more things I wish to share. From making b**r and w**e to curing meats to even building furniture and machining items to serve a purpose. I’m in 70sqft and bursting at the seams, imagine me in a building? It would be Wiily Wonka’s! How about we call it Vinny Bonka’s!

Honey Bee Emergency! Found this little guy in the shade stumbling around on the concrete, figured he was cold so I brought him to the Sunlight and in about ten seconds he flew happily away! Good deed for the day secured!
