🔪AZTEC CHICKEN 🔪

8oz boneless skinless chicken breasts *butterflied
1 cup seasoned flour
1 cup egg wash
2 tbsp olive oil
4 medium raw shrimp * peeled and deveined
4 slices of bacon * cooked and chopped
2 pepperonci *destemed and sliced
3 slices of fresh avocado
1/2 tsp raw garlic
1/2 oz. White rum
1/4 cup chicken stock

- in a large skillet, heat olive oil on medium heat. Dredge chicken breast lightly in flour and then coat both sides in egg wash and place in skillet. Cook first side of chicken until golden brown3-4 minutes. Flip chicken and add shrimp to skillet and cook shrimp 1-2 minutes on both sides. Next add garlic, bacon, pepperonci, and avocado. Cook ingredients down for 2-3 minutes and add rum and chicken stock. Reduce sauce in half and make sure internal temperature of chicken is over 165 *
Add salt and pepper to taste!!!

👨‍🍳PECAN CHICKEN👨‍🍳

*2 - 6oz. Boneless skinless chicken breasts
*1/4 cup oil
*1 cup seasoned flour (add salt and pepper to taste)
*Egg wash (1egg & 1/2 cup of milk mixed together)
*3/4 cup heavy cream
*1/4 cup pecan halves
*2 tbsp honey
1/2 oz. White Rum

**in a medium skillet add oil and place on burner at a medium heat.
Dredge both chicken breasts in flour and coat both sides. One at a time place chicken into egg wash and coat both sides and carefully place in skillet (make sure skillet is not very hot!!! It should start at a medium heat and then turned down if needed!!!)

Cook both pieces of chicken on each side (3-5 minutes on each side depending on thickness) until internal temperature reaches 165* F. The chicken should have a golden brown crust on each side.
In the same pan add pecans and honey. Pull skillet off of fire and add rum***this can and will create the pan to ignite and burn off the alcohol***
Please use caution when adding to skillet!
When honey starts to bubble in skillet add heavy cream and keep at medium heat. Let heavy cream reduce down until it bubbles and gets thick. Be cautious not to cook too hot or too long. Medium heat for 3-4 minutes.
This is a great recipe and a great end dish! Give it a try!!!🔪

Fried Potato Salad :
🔪🥔🍽

4 large potatoes- wash, bake until soft, chill, then dice up with skin on.

Mayonnaise - 2 cups
Mustard - 1/2 cup
Knorr Aromat - 1 tbsp
Gran. Garlic - 1tsp
Gran. Onion - 1/4 tsp
Kosher salt - 1/4 tsp
Black pepper -1/4 tsp

*Mix mayo, mustard, and dry seasonings together in a mixing bowl.
*Heat fryer or large pan with oil until it reaches 350 degrees.
*Add diced potatoes to hot oil and fry until golden brown and nice and crispy!
(fry potatoes in multiple batches)
Drain fried potatoes well.
* In a large mixing bowl, add fried potatoes and add dressing mixture and mix with large mixing spoon. Keep adding dressing until all potatoes are well coated.
** serve hot and fresh but dont hold, the dressing will break!!!
EAT UP!!!!!!!!

It is with great sadness that I write this post. We have decided to close Cafe on the Route but wish to thank you all for your love and support over the last 14 years. The fine people of Baxter Springs and all those near and far we have met over the years have brought us great joy and for that we are truly grateful. We value the friendships we've made and wish only the best for all of you in the New Year. God Bless......
