Dear Baltimore,
We have so loved the opportunity to serve you the past six years. It is with deep sadness that we announce our last service will be tomorrow Friday July 3, 2020. Back in 2014 we were sitting in an airport bar in San Francisco on our way back to Baltimore, struggling to come up with a name for the restaurant we were opening in the former space of the famed Chesapeake Restaurant. Nothing seemed to fit. The space held so much history and lived in the hearts and minds of so many Baltimore folks. Eventually, we settled on ‘Pen & Quill’ which had been the name of the Chesapeake’s piano lounge, named to honor Baltimore’s literary legacy. At first, Naomi wasn’t on board. She hated the idea of another ampersand joint 😂 But I sold her when I told her we could call it P&Q for short - mind your P’s & Q’s. Naomi has always subscribed to the idea that manners are the easiest form of kindness and generosity - of hospitality. Over these six years we have been lucky enough to host your engagements, wedding receptions, baby showers, fundraisers, late-night friend catch ups, post-movie reviews, pre-show cocktails, waiting on a train snacks, and all the bits in between. We have celebrated and commiserated right along side you. We hope, that in some small way, our being here has helped to make your day a bit brighter. We love you, Baltimore! Mind your P’s & Q’s 💕

This week’s special cocktail is a seasonal favorite at the good ol’ P&Q...our special house recipe, Pimm’s Cup! All profits from this delicious treat will be donated to The Arthur Ashe Institute for Urban Health .
Arthur Ashe was a great American tennis player who won three Grand Slam singles titles. Two months before his death he formed the AAIUH in response to the “disproportionate amount of illness and death from preventable diseases in our nation’s multi-ethnic communities” due to inadequate healthcare and late detection.

We have two things to tell you about with this post. First, this is our house made lemon tart with lemon custard and burnt Italian merengue 🤤🍋. Second, P&Q is now officially open for outdoor dining from 4-9 pm! We can’t wait to see all your gorgeous faces!

We thought you might be missing these guys (we sure are), so here are Greg and Bryan with a fun fact and their favorite cocktails...and for an added bonus, we’ve included the recipes 🍸 🥃
Greg was born in Montserrat in the Caribbean...and was the HEAVIEST BABY BORN THAT DAY (seriously, who doesn’t love this guy?). His favorite cocktail is a Boulevardier:
- chill a cocktail/martini glass
- you will need rye or bourbon, sweet vermouth (Dolin or something similar) and Campari
- measure equal parts of each (1/1/1 or 1.5 (rye)/1/1) and pour them into a mixing glass over ice. Stir until chilled and strain into your chilled cocktail glass. - garnish with an orange peel
- want to make it a Negroni? Swap out the rye for gin!
Bryan is from...are you ready for this one? Saskatoon, Saskatchewan! His favorite drink is a Sazerac:
- chill an old fashioned glass (double rocks glass)
- you will need rye whiskey, Peychaud’s bitters, Angustora bitters, absinthe (may substitute Pernod) and a sugarcube (1 tsp sugar)
- put sugar in a mixing glass with a small amount of water and gently muddle
- add ice
- add 1.5-2 oz rye, 4 shakes of Peychaud’s and 2 shakes of Angustora
- stir over ice until cold.
- add a teaspoon of absinthe to your chilled rocks glass and swirl around to coat the glass. Shake off excess.
- strain the ingredients from your mixing glass into the coated rocks glass and garnish with a lemon peel!

For 6 years we have been lucky enough to serve the people of Baltimore from our location in the heart of Station North. Thank you for always inspiring us to strive to be better than we were yesterday.
Each week throughout the summer we will donate the profits from a specialty cocktail to an organization that works to make our city an incredible place to live. This week’s donation will be to benefit The Leaders of a Beautiful Struggle .
