Most coffee cherries produce two beans that grow pressed against each other, creating the familiar flat-sided shape.

But occasionally, something different happens.

Instead of two beans, the cherry develops just one small, round bean known as a peaberry. These rare beans make up only a small portion of the coffee harvest—and their unique shape can influence how they roast and taste.

We’ll be sharing more about what makes peaberry coffee so fascinating, including the story behind our Cornizuelo Peaberry.
