A little note from the film director… aka “Il Regista”… aka me. 😛

Since we are sold out most weekends, we decided to create a new experience at Sotto Sopra: Bar Seating ( Bar top) reservations will now be available on OpenTable from 4pm–6pm every Friday and Saturday.

You can reserve those seats individually — perfect for a spontaneous pasta, a glass of wine, or a little escape before the city gets too crazy.

Tarragon and salmon are a beautiful combination for a reason. Tarragon has that delicate anise flavor that cuts through the richness of the salmon without overpowering it. It gives the fish freshness, elegance, and that classic old-school French touch that never goes out of style.

And there is also a reason why we trademarked our PannaMisu’. 😛When you go through over 300 of them a week… you start realizing maybe you created something special after all.

Tomorrow I’ll be posting our Father’s Day special for Sunday June 21st .

A little celebration for us dads… the silent soldiers behind the scenes doing all the important jobs mom reminds us about every 7 minutes. Taking the trash out, walking the dog while philosophically questioning every life decision that brought us here, and repainting the same wall 12 times until we finally discover the correct shade of “warm gray.” 😂

I feel you brothers. Stay strong. ;)💪

Truth is… I love being a dad. Especially in a house full of women. It’s very humbling to wake up every morning and realize your opinion means absolutely nothing because apparently they already know everything. Hahaha.

But tonight I was scrolling through thousands of family pictures and it hit me hard… how lucky I am. How fast the girls are growing up. How quickly life moves. One minute they’re little kids running around the restaurant, the next they’re becoming women right in front of your eyes.

Life is fleeting. Family is everything.

So salute to all the dads out there doing their best every day, quietly, without much credit most of the time.

On this rainy Saturday,
I will go ahead now … and make something special to celebrate the 250 years of America . I will enter all
reservations on July 4th in a nice raffle. Perfect Birthday celebration. Hopefully some of you can join us.

And I have a little thought of what this celebration means to me as an immigrant.

America is a strange experiment when you think about it.

250 years of people arriving from somewhere else… all believing life could somehow become bigger here.

Some made fortunes. Some failed. Some suffered. Some reinvented themselves completely. But generation after generation… people still come. That says something.

As an immigrant from Italy, I understand that feeling deeply. You arrive with an accent, a dream, a little fear, and a crazy amount of hope. Then life starts testing you immediately. 😄

You work, sacrifice, adapt, survive… and slowly this country starts becoming part of your story.

That’s what America means to me. Not perfection. No country is perfect. America is possibility. The idea that tomorrow does not have to look like yesterday.

And honestly… restaurants are a little version of America too. Different people, different cultures, different personalities… all sitting together at one table sharing food, wine, stories, laughter, and life.

So this July 4th, we celebrate 250 years of freedom, reinvention, ambition, chaos, and the human desire to build something better for the next generation.

I spent most all my teenage years working in Michelin restaurants before coming to America. I worked like a machine… long hours, crazy pressure, always chasing perfection. I learned a lot, but I never truly enjoyed that world.

I promised myself that one day I would open a different kind of restaurant. A place that could still offer an incredible experience, but in a more human way. No stiff tablecloths but naked wood, no unnecessary formality, no intimidation. Just great food, simple beautiful plates, warmth, energy, and people feeling happy when they walk out the door.

Years ago I had heard about DiRōNA Awards, but I didn’t pay much attention to it at the time. Funny how life works. Sometimes you don’t realize the meaning of something until much later.

Now I look at it differently. Whoever created DiRōNA understood hospitality on a deeper level. In my opinion, it was pure genius. Almost like the Van Gogh of hospitality. Because true hospitality is not just about technical perfection… it’s about emotion, memory, comfort, humanity.

Michelin can judge ex*****on. But hospitality? Hospitality is something people feel in their soul.

And mark my words… I will make it part of my mission to help make DiRōNA more important and respected than Michelin one day. Because restaurants should reward not only perfection on the plate… but also the human experience around the table.
And if you know me … you know I’m relentless when I set goals…. since I was a teenager.

Monika with Mr. Bo — a true Sotto Sopra legend. He’s been coming here since 1996. Relationships like this are the real heartbeat of a restaurant.

And honestly… Monika is slowly taking my place these days. I want people to feel her energy more and more when they walk through our doors. She has a calming, healing presence that makes everybody feel comfortable and cared for.

Meanwhile I’ve officially entered my “grumpy old Italian man” phase. 😂 I stay in the background making sure everything runs right while Monika brings the warmth and the smiles.

Maybe that’s why Sotto Sopra still works after 30 years — her sweetness balances out my craziness perfectly.

In honor of our recent trip to Franciacorta, we are excited to now carry the full Bellavista collection at Sotto Sopra.
This will officially become our new sparkling wine program in place of Prosecco.

So what’s the difference?

Bellavista produces Franciacorta DOCG from Lombardy using the Metodo Classico — the same traditional bottle fermentation method used in Champagne. This creates a sparkling wine with more depth, elegance, creaminess, and complexity.

Prosecco is produced mainly in Veneto using the Charmat method, where fermentation happens in steel tanks. The style is typically lighter, fruitier, simpler, and more playful.

Both are Italian. Both are beautiful.
But Franciacorta is truly Italy’s grand sparkling wine tradition.

Bellavista, founded by the Moretti family in 1977, is considered one of the most prestigious sparkling wine houses in Italy, and we are proud to now share it with Baltimore at Sotto Sopra.
