The Indefinable World of Natural Wine
Certified organic. Biodynamic practices. Funky tastes. Fermentation. Limited intervention.

Natural wine is one big, yet-to-be-defined arena of the wine world. At Via Rosa 11 we’re aware that when we say natural wine it’s may seem we’re feeding into the trend of natural wine…when the truth is— organic farm practices, limited intervention is the way wine was for centuries.

We like to think of it as what’s old is new again.

On Wednesday September 9th from 4-7 we’re having fun with wines from our selection that we not only love, but that fit the several vocabulary words of the natural wine umbrella. We’re talking bottles like the Lunaria Malvasia Pet Nat with its visual sediment pictured above, or super clean bubbly Lambrusco to ultra complex white wines with incredible depth only made possible by skilled viticulture.

It’s not just about the funk, it’s about the story of these producers and their commitment to their land. It’s also about how delicious these wines are, and how at the next Tasty Wednesday you have a chance to taste them along side our team. This lineup is a favorite from your Via Rosa 11 Tasty Wednesday team, we can’t wait for you to sip them too!

Tasty Wednesday Details:
🍷Wednesday, September 9th
🍷NEW HOURS: Drop in 4-7pm

Our classic pesto made with 100% Ligurian olive oil from Aldo Armato

Our classic pesto recipe is delicious and does not need improvement. We were curious however, what happens when we make a pesto using not our standard Basso work horse olive oil, but nothing but buttery rich taggiasca olive oil from our core market olive oils by Aldo Amato?

$18 per jar
If we are throwing a ‘Festa of Liguria’ and it’s most culturally prominent sauce during Peak Pesto, let’s use the olive oil of the region in true celebration!

The result?

The almond-y, buttery walnut notes of the single olive varietal olive oil soars in compliment with the walnuts, almonds and pine nuts of our pesto classico. It’s softer, offers a little more richness, and in the spirit of the short season, only available in a very limited quantity.

True Liguria in a jar. Pair with our Gnocchi di Patate (Potato Gnocchi) for best results!

The wine was delicious…
But our pesto was the star!
Missed out on Tasty Wednesday? That’s ok! There will be plenty others to join us and taste wines from our collection!

Yesterday we featured 5 wines to pair beautifully with our Peak Pesto season. Some came out on top! Some were not the favorites, and that’s ok too. Pairing with pesto we decided to offer complimentary pours rather than contrasting flavor profiles— that means light, chilled reds, acidic yummy whites and of course, two incredible bottles from the land of pesto: Liguria.

With both Punta Crena wines from Liguria, their new vintage arrival was just in time for our tasting having arrived from Italy just days prior. Your first sips of these wines were ours as well, the new vintage beautifully expressing Pigato in the dreamy characteristics promised. Across the tasting board, Pigato was a revisited option aside bites of focaccia and our house Genovese Basil Pesto.

As much as your Via Rosa 11 hosts attempted a love connection between the guests of Tasty Wednesdays and the wine pours, the true star was the Genovese Basil Pesto.

Are we surprised? Not at all, it’s delcious and we don’t call this season Peak Pesto for no reason. It really is a magic condiment, herbal, peppery, floral and high quality. Our pesto is made by hands that share generational knowledge of pesto making. It’s in our DNA.

So to answer the questions to our audience directly:
- Yes, we do make our own pesto. It’s a family recipe, it’s outstanding.
- Yes, in the market our pesto is available every day. If the market is open, the pesto is on the shelf.
- 100%. You can enjoy as much pesto as you wish.

For the rest of the summer we are featuring Peak Pesto…it’s time for you to come in and taste this besto pesto for yourself!
