A lot of people are sick and tired of hearing restaurateurs whine and complain about current conditions in their businesses. I hate to whine and complain, so let’s just call this post an explanation.
Full-service sit down restaurants need staff to do what we do. When we don’t have enough staff our options are: close down (for the night, or until we find, hire, train more staff), try to pull it off short staffed and fail on quality and service, or permanently close down). None of those options are easy.
Tonight a tired old man and a dishwasher who can make salads will be the only kitchen staff. I’ve worked with some phenomenal chefs over my many years but there hasn’t been a chef born yet that could pull off our full menu alone. The best solution I can come up with now is simplify the menu for tonight. Sorry, but it’s better than the other options.

We are so short staffed that the only options when someone calls out are to just wing it (and we usually get crushed in that situation), limit menu options, or just close for the night. Always seeking ideas to improve. Thursday nights tend to be on and off a slower night at TBA. Kicking around some ideas to achieve some consistency on that night. Someone suggested a “TBA Allstar Night” of rotating Open Mic Night regular performers , 3 or 4 per night, unplugged acoustic where each would get more songs to play and some could jam together. I like it, what do you think?
