This is the Ruyter fam.

The picture on the left is was in 2019. We just passed our first inspection that December of 2018 and I was trying to make this food truck passion happen when I could on the weekends. It was just me and the truck. No paint job or wrap. Just a silver bland 7 x 14 trailer (I’m almost 6’8, can you picture me in that trailer?!?) and a recipe and brand that I believed in. That I felt The Lord had given me. They came out every so often on weekends to support AND? They brought friends. AND family.

I say this all the time. The best part of being a business owner is the people. It’s seeing old faces that have committed to supporting from the jump. Joey and his family have been a support in some shape or form since literally day 1. Not just verbal support, but support with their earned money. And let me tell ya, they don’t have a small family 😅. And this is the customer loyalty that makes it all worth it. We’re here today, still doing business almost 8 years later because of people like the Ruyter family. And business is growing!

So I just want to take this Monday evening to remind you to support your local businesses doing good, honest work, the right way! Spend your dollars, refer us to your bosses at work and your HOA’s and your apartment managers and more. Share our posts. Drop a like. Keep us busy, so we can continue serving and being a light in the community. Cause I can assure you that if we lost local places like Teal House Coffee & Bakery, or Sianni Dean, or Paperboy , or Desnudo Coffee , or Show Me Pizza , Bird Bird Biscuit , Venezuelan Grill , Neighbor Coffee & Friends , Milk + Honey Coffee Co. , Tiny Pies® , KC Donuts (Please open back up), and much much more, this world, Austin in particular, would be a sad place!

When you’re buying food from a food truck, it’s important to understand there’s an up-charge for convenience. If we bought everything and sold it at the same price you could get it at the grocery store for, we would be terrible entrepreneurs and would go into debt.

Convenience can look like:

•Time
•Labor
•Education
•Upfront costs
•Creativity

Sometimes, you’re also paying for entertainment and experiences. Positive deposits toward your mental health.

Another thing you need to understand about food trucks is you can’t buy bulk like a chain restaraunt. Many of us small business owners buy our ingredients at places like H-E-B , Costco or Sam's Club.

We’re not “expensive” because we want to be. We want to be able to cover our costs, pay our employees well and have a little bit leftover for us to live a decent life by putting in the work and providing convenience alongside other things, for others! Remember this next time you buy from a food truck.

Over 200 reviews for our dessert company!!! Thank you all so much. It’s a super humbling thing to ask for reviews, and it probably is annoying sometimes as a customer to get asked. But not caring about how people see you is one of the things you need to be a great entrepreneur. One 5-10 second review can make a significant impact on our business. It’s worth the ask! One thing I’ve learned when it comes to being a business owner is no matter how big you see yourself getting, it’s always (hopefully) a make up of each positive customer experience that gets you there, alongside a great product. Every interaction matters. I almost hate that you need to make money because the love for simply the art of business is real. Anyway, we have built this thing one customer at a time and will continue to do so.

We lost money on this truck for 3 months.

Earlier this year, we were invited to be apart of a great property at a great location off of 290 next to Milk + Honey Coffee Co.. (BTW. Our dessert food trucks locations serve as one of our streams of income within the company - we have 3)

A few years ago we closed our 2 food truck locations down so we could build our event sector and pay off our debt. I know what it’s like to start from zero. $400 in credit card debt and a dream. I told my wife that we would give it 6 months of losing money to see if we could make this new spot work.

3 months went by. Seeing growth but still in the red. Event money is basically paying the bills and our teams. May comes? And for the first time, we basically broke even minus like $100 bucks. It was an incredible feeling to know that all the different little things that we were committed to as a company finally started paying off.

Now we’re in June. Month 5. And the first 2 weeks so far we have turned a profit at this location! Y’all, I am pumped! I’m grateful to God, I’m grateful to YOU, I’m grateful for the overall support. Every little bit counts and has helped us reach these milestones.

And I’m sharing this with you all because even though I know what it is to scale a food truck, I want to do it differently this time. I realized that the first go round, I rarely took the time to celebrate or make much of the small milestones. I would celebrate getting featured in articles like Austin Monthly Magazine or The Austin Chronicle or getting into ACL Festival because those were BIG. But what about celebrating a Friday night beating the previous sales record (prev. Saturday night, our busiest day) by $1???

So, we’re gonna gratitude this thing all the way to the top. And the top is no longer the destination or a sales feat. The top is being fulfilled in your little contribution to this big world, finding people you can impact and making as many people smile as you can using the work of your hands.

I’m still waiting for the Lord to tell me why I was supposed to do pancakes. Maybe he’s showing me versus telling me. Regardless, we will continue to trust AND enjoy the process :) See you this weekend 🥞

Seriously, so thankful for the small, but growing customer base we have! Keep spreading the word, and bringing your friends and family!
