Ruby’s BBQ offers real pit-smoked barbecue with both traditional and non-traditional sides, as well as Cajun and vegetarian inspired dishes. Ruby’s opened in November of 1988 in a year marked by a poor economy in Austin. Our mission was to bring good, homemade food to the University of Texas area and the blues folks frequenting Antone’s, and yet maintain
a modest price. This is not an easy task, g

iven the meat intensive focus of our menu. Through the years we have evolved; and the menu has grown with the addition of salads, tacos, Cajun food, vegetarian items, and soup and side dish specials. Our eclectic clientele from the UT area, Hyde Park, West Austin, “Q” addicts from South Austin, musicians, film aficionados, and many international visitors have encouraged us to expand the menu. (Make sure to check out our many photos and autographs while at the restaurant!) Despite the growth, we have tried to maintain our down home BBQ roots, which have always been greatly nurtured by the Antone’s blues folks. Watch for more variety in the future! The 2022 Rush Creek Reserve is here!

Brought to you by the folks from Uplands Farm this cheese is produced only in the fall, as the diet of their cows begins to change from summer pasture to winter’s dry hay. Each cheese is wrapped in spruce bark, which gives shape to the cheese and imparts a subtle woodsy flavor.

Before serving Rush Creek, bring the cheese to room temp or warm it gently in an oven. When using an oven, remove the paper wrapping and either wrap the cheese in tin foil or cover it in a ceramic crock. Place the cheese in a 250-degree oven for approximately 45 minutes or until the entire cheese becomes soft and warm.

Use a knife to cut around the perimeter of the cheese, just above the bark. Lift off the rind and scoop out the soft interior with a spoon. The rich, savory flavors are deep but delicate and pair nicely with cured meats, roasted root vegetables, and dry white wine.
