Albert C. “Smokey” Denmark (with his wife at his side) began his business in Austin, the capital city of Texas, after learning from the legendary sausage makers of Central Texas. From 1972 (when he retired) to the present, our family, like Smokey, has continued to adhere to the highest standards. A partnership this good deserves to be celebrated with smoke and sizzle. 🪵💨

Lone Star Meats eats isn’t just a vendor and a customer to us—they’re our neighbors and key partners in what we do. We source our premium raw materials from them, and honestly, their incredible quality is a huge part of why our sausage tastes so good!

To say thanks for their continued support, we broke out the Smokey Denmark kielbasa, jalapeño cheddar sausage, and hot dogs today. Safe to say the crew approved—we saw plenty of people coming back for round two.

Smoked Sausage Quesadillas — packed with sautéed jalapeños, onions, bell peppers, and Smokey Denmark sausage, then melted together between golden tortillas.
Simple. Bold. Crazy good. 🌮🔥

INGREDIENTS:
• 10 flour tortillas
• 1 lb Smokey Denmark Smoked Jalapeño Cheese Sausage (or your favorite Smokey Denmark sausage)
• 1 onion (sliced)
• 1 bell pepper (sliced)
• 2 jalapeños (seeded + sliced)
• 2 cups grated cheddar
• 2 tbsp butter

INSTRUCTIONS:
1. Sauté diced sausage, onion strips, bell pepper strips, and jalapeño strips in butter until onions are tender.
2. Warm tortillas on both sides and set aside.
3. Build one quesadilla at a time: tortilla → sausage mixture → cheddar → second tortilla.
(Or fold in half if your skillet is smaller.)
4. Brown both sides until cheese melts, then slice into quarters.

Serve with: pico de gallo, salsa, sour cream, diced jalapeños, and guacamole.

It’s that time of year—cool breezes in the morning, and a low-country boil by the afternoon. Whether you’re heading to the beach, firing up the BBQ, camping out, or just getting together with friends and family, this recipe brings the flavor and the fun. INGREDIENTS
• 2 (16 ounce) packages of Smokey Denmark’s Hotlinks, cut into 2-inch pieces.
• 3 tablespoons shrimp and crab boil
• 3 tablespoons salt
• 1 ½ gallons water
• 2 pounds tiny whole potatoes
• 12 ears freshly shucked corn, cut into 3 to 4-inch pieces
• 4 pounds medium or large shrimp

DIRECTIONS
In a large stockpot, add the shrimp and crab boil and salt to the water and bring to a boil. Add the sausage and potatoes and boil, uncovered, for 5 minutes. Add the corn and count 5 more minutes. Add the shrimp and count 3 minutes. Do not wait for the water to come to a boil when timing the corn and shrimp. Drain immediately and serve.
Serve with plenty of hot sauce and additional shrimp and crab boil.

• 1 (32 oz pkg) frozen tater tots (room temperature)
• Fried eggs (1 per waffle)
• Shredded colby jack cheese
• Diced scallions
• Favorite ranchero or verde sauce

DIRECTIONS
Heat a regular or Belgian waffle iron. Arrange tater tots in an even layer across the entire surface of the waffle iron; pile another handful or two of tots if using a Belgian waffle iron. Sprinkle with salt. Press down on lid to close and cook waffle until golden brown, 6-10 minutes depending on your iron.
While the waffle is cooking, brown the sausage and fry the eggs.
Top the waffle with cheese, sausage, scallions, two fried eggs and your favorite ranchero or verde sauce.

It only takes 30 minutes to prepare, making it an unbeatable quick snack that is sure to be a crowd favorite. Pigs in a Pretzel Blanket
 Ingredients:
 
1 package Smokey Denmark’s B**r Brats
2 cans (13.8 oz) pizza crust (room temperature)
5 cups water
¼ cup baking soda
1 egg, beaten
Kosher salt, to taste
 
Prep time: 10 minutes
Cook time:  20 minutes
 
Directions:
 
Preheat oven to 425 degrees
 
Open the cans of pizza crust; stretch and roll them out.  Cut into 1 inch wide strips.
 
Cut the sausage links in thirds.
 
Roll up the sausage in the pizza dough so the dough wraps around twice – leaving the ends sticking out and cutting off any excess.
Secure with a toothpick.
 
Place on a lightly greased baking sheet until ready to boil.
 
Bring water to a light boil; add in backing soda
 
Once dissolved, boil wrapped sausages in water mixture for 20-30 seconds each (working in small batches)
 
Remove and place back on baking tray.  Brush each lightly with beaten egg and sprinkle with kosher salt and everything bagel seasoning.
 
Bake for 15-20 minutes until the dough is nicely browned.
 
Remove toothpick and serve with your favorite mustard.
