Hudson's has closed yet again as of March 4. Our investor's pulled out and we were unable to sustain the restaurant financially. We are so disappointed and want to thank the local community that supported our efforts. Chef Joseph Farner is starting a personal chef services and catering company so please reach out if you have any interest.

Sorry for being neglectful to my posting duties this week!! So many things going on. Here is our new and improved Elk backstrap. Rubbed with espresso ancho chili chocolate rub and then smoked to perfection. Buttery soft and decadent. Finished with a silky smooth parsnip purée and a red wine veal demi sauced kissed with just a hint of thyme 🤤😘 unbelievably delicious

My stance on food is firm. Clean, simple, elevated. Let the ingredients speak for themselves. Don’t over do it. Flavors are a delicate blend of thoughtfully put together ingredient’s here at Hudson’s. Never more than 5-7 ingredients per dish. Every spice ground fresh down to the pepper we mill daily. 🔥🔥🔥 Here I am preparing the rub for our amazing smoked elk backstrap 🤤🤤
