Why sear before roasting? 🥩👨🏾‍🍳

Searing doesn’t “lock in” juices—that’s actually a common myth. What it does do is create a beautifully browned crust through the Maillard reaction, which develops rich, deep flavors and an irresistible texture.

✨ Sear first for:
• A flavorful golden-brown crust
• Better color and presentation
• Added depth of flavor
• A restaurant-quality finish

Then transfer it to the oven to cook gently to your desired internal temperature. The result? A perfectly cooked, juicy piece of meat with incredible flavor.

💡 Chef Tip: Always pat your meat dry before searing and use a hot pan with a high-smoke-point oil for the best crust.
