New year's "Brisket Style" Chuck update! Hit my temp perfect, taste is spot on, and it tastes just like a brisket. Texture is very similar to brisket as well. I'm calling this a success!

Prepared a special dinner for some Henderson Health Care board members, physicians, & employees. The meal consisted of Braised Roast Beef Tips, Smoked Pork Tenderloin with Bacon Jalapeno Glaze, Twice Baked Potato Casserole, Buttered Corn with red & green peppers, Chopped Autumn Harvest Salad & Dinner Roll along with Sangria. Dessert conisted of Black Forest Cheesecake Cake, Chocolate Peanut Butter Cake, Pecan Pie Cheesecake (no picture 😥), & Cherry Chrescake. It was a great evening!
