THE STORY OF VICKI'S CHEESECAKES in her own words:
“The cheesecake recipe came out as my brother's recipe. He had worked on it for years, making the cheesecake for the Little Pops in Maybrook, NY, which is my brother and my nephew's place. It's a true traditional New York cheesecake. It's creamy, not chunky like a ricotta cheesecake.
Then I kind of ran with it and did the chocolate chip cheesecake, and then just decided to play around with it even more.
I love sweets. Putting them together, putting the flavors together, putting the layers of flavor together. That's how our specialty cheesecake of the month began.
You're thinking about the seasons and holidays. October and November is Pumpkin Cheesecake. September is the Caramel Apple Crisp Cheesecake, which is a huge undertaking in its own right, but it's so delicious that it's worth it. Lemon, you think of Mother's Day so I created a Lemon Cheesecake. S'mores, you think of July. Amaretto is one of my favorite flavors, so Amaretto Cheesecake just ended up being January. March is St. Patty's Day so I created our Bailey's Irish Cream Cheesecake. May is Father’s Day. Triple Chocolate seemed like Father's Day to me, just this big hunk of chocolate for Father's Day.”
