THIRD THURSDAY TASTING!

Sit down with friends. Make some new ones. Relax, laugh, eat, drink, and enjoy your evening.

This month we’re taking a little adventure without leaving Audubon, Iowa: 7 wines and 4 pides, served throughout the evening. Would you normally order these wines? Would you put these combinations on a pide? Who knows. Maybe you will afterward.

And because it’s Iowa, yes, there is corn—but only on one pide. Maybe there's more if you count the meat as corn-fed, but once the corn has been removed from the cow or pig, I’m pretty sure it shouldn't count anymore.

🧪❄️ SLUSHIE LAB UPDATE — TOP SECRET (ISH) ❄️🧪

So here’s what’s going on at Pide Pizzeria this summer…

We have slushie machines.

Yes. Real ones. Running. Working. And quietly changing the rules of July.

We’ve been testing recipes behind the scenes, and they’ll only be available to those in the know (and anyone brave enough to show up on Third Thursdays).

But here’s the twist:

🍷 The base wine we’re using has a unique sour finish
🤖 AI tried to solve it… and the result was, scientifically speaking, yuk
🧠 Humans stepped in… and suddenly everything changed

It turns out the “secret” isn’t avoiding strange combinations.

It’s balancing them.

Like Dr Pepper + Orange Soda—
Separately: questionable.
Together in the right proportions: weirdly, dangerously good.

Two wrongs don’t make a right…
unless they absolutely do.

We now have a refined slushie formula that turns chaos into something smooth, refreshing, and slightly addictive.

I’ve got about:
🍷 8 bottles reserved for the primary summer slushie
🍷 9 bottles for a second variation I’m developing in parallel

Between the two, summer is basically covered. If not, there are… dozens of backup experiments waiting their turn.

Availability:

❄️ Slushies will be available Fridays & Saturdays
❄️ On other days: order 4 and I’ll batch one up fresh

A few lab rules (non-negotiable):

🚫 No boba straws (brain freeze is a real operational failure)
🥤 Regular straws only
🧠 Self-control recommended for optimal enjoyment
🍷 Must be 21+ to participate in slushie testing

Price:

💵 $6 per slushie (slightly larger than a glass of wine)

All recipes have been personally vetted by me—and by a small group of people who have survived previous experiments.

Hello Pidelanders!

RAGBRAI is approaching.

Flee! Run to the hills! Hide!
..Or maybe not.

The riders are bypassing Audubon this year, so we probably won't be overrun. But we're only a short ride north of Exira, and we just might get a few hungry strays. If they need a place to cool off, relax, and eat well, Pide will be here for them.

We'll be OPEN Sunday and Monday with:

🍷 The wine flowing
🍺 Cold beer on tap
🍹 Slushie machines running
🥤 Fresh brewed iced tea
😊 And me, ready to take your order.

Sunday: 3:00–8:00 PM
Monday: 1:00–8:00 PM

Our Steak Special will also be available Saturday through Tuesday... unless you all beat the cyclists to it and I run out first.

July Edition — because it’s too hot to behave normally.

Welcome to Pide Pizzeria’s Slushie Laboratory, where wine goes to be re-engineered.

This is not a tasting.

This is an experiment in frozen fermentation physics.

You are being recruited as a Slushie Scientist.

Two factions will form in the lab:

🍷 TEAM DRY & DANGEROUS
Sharp. Crisp. Overly serious about acid balance.

🍓 TEAM SWEET & UNSTABLE
Fruity. Bold. Possibly dangerous in large quantities.

Each team will enter the lab with one mission:

BUILD THE PERFECT WINE SLUSHIE FORMULA.

You will have:
🧊 Two slushie machines running nonstop
🧪 A full ingredient station of modifiers, mixers, and “what if we tried this” options
🍷 A rotating selection of wines ready for transformation
🧠 Zero supervision of your better judgment

Round 1: Baseline Formula Development
Round 2: Mad Adjustment Phase (a.k.a. fix what you broke)

But the experiment doesn’t stop there…

🍕 Each slushie must be paired with Pide Pizza lab samples made from our regular menu ingredients. Your job: discover which combinations create unexpected genius… and which should be reported to science.

Then we decide:

🏆 Which team created the superior frozen elixir of summer survival?

⚠️ Warning: taste-testing is required. Confidence may increase. Opinions will become loud.

🌞🍷 THE LONGEST TASTING OF THE YEAR 🍕🌅

Join us at Pide Pizzeria on Thursday, June 18, 2026 at 7:00 PM for a special wine and pizza tasting held just days before the summer solstice.

Twelve wines. Twelve paired pides. One evening that starts in daylight and finishes after sunset.

We’ll travel from crisp citrus and bright whites through aromatic florals, refreshing rosés, sparkling celebration, and finish with rich reds and bold summer flavors.

🍷 Highlights of the journey:
• Dry & refreshing Sauvignon Blanc with goat cheese, spinach & roasted garlic pizza
• Aromatic Torrontés with chicken, red onion & cilantro
• Floral Moscato paired with prosciutto & fig
• Rosé flight featuring Mediterranean and herb-forward pizzas
• Sparkling Prosecco Rosé with spicy pepperoni
• Elegant Pinot Noir with wild mushroom
• Bold Cabernet with steak & blue cheese
• Finish with our richest pairing of the night — Zinfandel with meat lovers pizza

Third Thursday Tasting is coming up just in time to kick off Memorial Day weekend.

Let’s make this one simple, warm, and fun.

A few more reds this time. I plan to lean heavier into mushrooms and meat for the tasting this month. Should be a little cooler Thursday, so let’s make the evening cozy and friendly.

This would be a great tasting to bring friends to for their first time trying one.

Onion sauce, mushroom sauce, red sauce… and maybe even a cream sauce. I hope you are hungry.

The wines are chosen, the game board is set, and I now have a new long table setup — so the more the merrier.

Ok… technically it’s the storage area on the way to the kitchen and bathrooms, but now it’s covered in wine racks and honestly it’s starting to feel pretty official.

Saturday I’ll open early for anyone who wants to spend the afternoon sharing wine and food inside a quiet, cozy, friendly space. Maybe you just want to sit at the long table and see who the cat drags in.

The Viking helmets are optional… for now. 🍷⚔️

Third Thursday is April 16th. 7pm.

We have 7 wines and several new dishes to taste with them.

This event each month challenges me to be release my creativity and to improve the experience. The food, the drink, they are only part of the experience. It is the game concept developed from ideas the tasters came up with, the talking with other participants openly with common topics to spread to the personal, the making of new friends, this night is special.

The desire to connect, explore, to have an adventure and be able to express your thoughts. I will cook, serve, host, and be there tasting with you. This is life the way I want it to be. I thank each of you who come and make this night memorable.
