🍂🍕 WELCOME TO IOWA IN THE FALL!

The cooler weather is here.

And you know what sounds good when the temperature starts dropping?

Pizza.

Maybe it's been a while since you've had one. Maybe you've been thinking about it but haven't quite made it through the door.

Well, here's something to think about.

🧅 The French Onion Pide is BACK!

Rich, savory, and just right for those cooler days and evenings.

Our Burnt Ends Pide seems to fit this time of year too. Something about smoky, hearty flavors and autumn weather just works.

Meatlovers? Always a favorite.

Or maybe tonight you're in the mood for something simple. A one-topping pizza. Nothing fancy. Just good pizza.

Yeah, that sounds pretty good too.

🍷 COOLER WEATHER MEANS RED W**E?

That's what a lot of people seem to think.

And I get it.

There's something about a cool evening that makes a glass of red w**e sound especially inviting.

Fortunately, we've got plenty to choose from.

And speaking of w**e...

🌧️ THURSDAY'S HARVEST TASTING

The forecast says rain on Thursday.

Bring it.

We'll be inside, where the pizza oven keeps the room warm and the company can relax and chill.

The kitchen will be busy, the w**e will be flowing, and with a little luck, good times will follow.

After all, a rainy evening can be a pretty good excuse to spend a couple of hours with good food, good w**e, and interesting people.

🍎 THIS WEEK'S W**E SLUSHIE: APPLE PIE!

Yes, Apple Pie.

And no, sorry kids. This one's for the grown-ups. You must be 21.

The name came from something rather interesting.

There's a buttery pie-crust flavor that shows up right at the finish.

Take a sip and see if you notice it.

Now, unlike most things we serve, this slushie doesn't pair particularly well with most pizzas.

Wings? Yes.

Steak? Yes.

Pizza? Not so much.

But there's an easy solution.

Have the Apple Pie slushie while you wait for your pizza, then switch to water with dinner.

Problem solved.

🍺 AND THEN THERE'S HARD APPLE C***R...

Cool weather and hard apple c***r.

Now there's a combination.

Unlike the Apple Pie slushie, our hard c***r goes with just about everything on the menu.

A nice goblet of c***r alongside a hot pizza or pide?

That sounds like a pretty good autumn dinner to me.

So here we are.

🍂🍕 IT'S BACK! OKTOBERFEST PIDE!

Mushroom b**r cheese sauce. Polish sausage. Onions. Peppers.

Put them together on a pide and you have our Oktoberfest Pide!

Once available only during special tastings, it's now earned a permanent place on the Pide Pizzeria menu.

And it's not the only old favorite making a comeback.

🧅 FRENCH ONION PIDE IS BACK TOO!

These flavors, along with plenty of other favorites, are waiting for you at Pide tonight.

We've changed the menu, but only in good ways.

Gone is the long list. In its place is something with a little more depth. More opportunities to explore different combinations of bread, sauces and toppings. More chances to discover something you didn't even know you were hungry for.

Because sometimes what sounds good for dinner isn't what sounded good yesterday.

I've noticed something interesting over the years. The temperature and humidity outside seem to have an effect on what people order.

A cold, damp evening brings out different appetites than a warm, sunny afternoon. Sometimes you want something rich and hearty. Other times something lighter sounds just right.

And sometimes you see a combination on the menu and think, I wonder what that tastes like?

That's part of the fun.

So here we are, with a beautiful day outside, a new menu to explore, and a couple of old favorites back where they belong.

🍂🍷 ONE WEEK TO GO! THE HARVEST TABLE IS COMING!

Thursday, October 15 • 7:00 PM

The High Table is SOLD OUT, but there is still room at the Harvest Table! Just 18 seats, and that is a hard limit.

If you've been to our Third Thursday Tastings before, you know we like doing things differently. In fact, the Third Thursday is different every month.

And this month, we're going to let you help decide what's coming out of the kitchen!

🍕 WHAT WOULD YOU LIKE US TO MAKE?

Tell us in the comments!

Have a favorite dish? A recipe you've always loved? An unusual combination of ingredients you think would be delicious?

Let us know. Better yet, share the recipe!

If we have the ingredients, we might just make it. We may have to adapt it to our kitchen, but hey, that's the kind of thing we enjoy doing.

If your suggestion doesn't make it onto the Harvest Table, we'll tell you why.

There are, however, two rules.

No Jell-O dishes. Sorry. Just no.

And no fruitcakes either.

A pide with your favorite toppings? Absolutely!

Our available sauces include French onion, b**r cheese, mushroom and red. BBQ and ranch are also readily available.

A pide has eight pieces. When those eight pieces are gone, they're gone.

And that brings us to one of the biggest themes of Pide Pizzeria:

When it's gone, it's gone.

🍷 NOW, ABOUT THOSE W**ES...

We're planning on approximately 30 w**es to choose from.

There might be a couple of duplicates, but don't count on it.

You'll find:

W**es that earned Wedding Bells at previous Third Thursday Tastings.

W**es that are completely new.

W**es that are down to their very last bottle.

And one or two w**es that are there for absolutely no good reason at all.

You'll choose one bottle to be your w**e date for the evening.

But don't block somebody else's choice. Part of the fun is discovering what everyone else picked!

Will our returning guests choose a w**e they previously gave Wedding Bells? Or will they take a chance on somebody new?

Hard to say.

And here's where things get interesting.

You can share tastes. You can negotiate. You can trade w**e dates.

Even the staff hosting the evening will choose bottles and be willing to share and trade.

As for displaying the w**es, I might put all 30 bottles on the bar so everyone can see them.

Or I might leave them in the w**e rack.

I rather like the idea of hunting through the rack for that special bottle.

We'll see.

🍽️ MEANWHILE, THE KITCHEN WILL BE BUSY!

We'll be making small dishes throughout the evening, bringing them out to the Harvest Table as they're ready.

Some familiar. Some experimental. Some inspired by your suggestions.

And some that might never be made again.

To us, the fun is putting something on the Harvest Table that disappears almost as quickly as we set it down.

SOMETIMES YOU JUST WANT PIZZA.

With all the w**e we've been talking about lately, it might be easy to forget the name on the door is Pide Pizzeria.

We make pizza. We make pides. We make wings and a few other things. And we have a new menu that makes finding what you want a little easier.

We're not a chain, and we're not trying to compete with the gas station down the road. If what you want is inexpensive pizza that's ready fast, they've got that figured out.

We do something different.

For us, pizza is bread, sauce and toppings coming together to make something worth sitting down for. Sometimes that's a familiar combination. Sometimes it's something you probably haven't tried on a pizza before.

That's also why we have the smaller pide size. Two people don't have to agree on one big pizza. Try a couple different things. Share them. Find a new favorite.

And yes, sometimes you order exactly the right amount and nothing is left.

But this is pizza.

Taking home a little box to raid the refrigerator later is practically part of the experience.

So after a day at work and an afternoon enjoying this beautiful weather, you don't necessarily have to figure out dinner.

Come in as the sun is going down. Pick something up to take home, or grab a seat and stay awhile.

Your pizza isn't going to appear 90 seconds after you order it. It takes a little time to make.

Fortunately, we have distractions.

Try a peg puzzle. Play a game of chess. Shoot some pool. Find the arcade machine. Grab a deck of cards. Talk to the person sitting across from you.

Or don't do much of anything.

Sometimes a comfortable chair, some background music and a slower pace are exactly what you need.

Most nights, the guy who greets you at the door, takes your order and disappears into the kitchen is also the guy making your dinner.

That's Pide Pizzeria.

Stop in. Say hi. Have some pizza. Stay awhile.

And if you're really in a hurry?

The gas station is pretty fast.

Apparently the w**e rack has been decorating for Halloween too.
We were looking through the bottles and realized we had quite the cast of characters hiding in there.
Freak of Nature. Jawbreaker. Chinon. Vinum. Monte Volpe.
And no, we didn't dress them up for the picture. Those really are the labels.
Five w**es. Five very different personalities. All priced to make it pretty easy to pick one for the table—or take one home for your own Halloween gathering.

A reason to spend Friday night in Audubon.
Dancing at Pide.
The furniture gets rearranged. The wood floor opens up. The music gets louder. The lights get dimmer.
Wait... are those disco balls?
From 9 PM to midnight, dance music from the 70s, 80s, modern and techno mixes together and gets your feet moving.
The kitchen stays open with a limited menu, and the bar actually gets used as a bar. Water and fresh-brewed iced tea are complimentary because we want everyone to be able to come dance, hang out and enjoy the night.
Dancing is the focus, but we'll keep some tables around the sides for gathering, eating and talking. The music will be louder than a restaurant probably ought to be—but not so loud that you can't have a conversation.
Because dancing is social.
And Pide is a place to gather.
Movie let out but you're not ready for the date to end? Head down to Pide.
Sports are over and everybody is asking, “Now what do we do?”
How about dancing?
Don't know how?
Good. Neither do I.
I danced every Friday night during the 80s and apparently nobody stopped me.
Let the music move you.

Well, that happened faster than expected.
The October Third Thursday High Table is SOLD OUT. We can take names for the waiting list, but all six seats are spoken for.
So now let's talk about the Harvest Table.
All year long we end up with the last bottle of this vintage and the last bottle of that w**e. One bottle isn't enough for a normal tasting.
So we're turning the singles loose.
At 6:50, paid Harvest Table guests get first crack at a rack of nearly 30 last bottles. Pick your date and take it to the table.
Then the market opens.
Share a taste. Make a trade. Strike up a conversation with somebody at the next table. Come as a group of four and suddenly you've got four bottles and a lot of potential new friends.
Or taste yours, pull it a little closer and decide:
Mine.
That's perfectly legal too.
Meanwhile, the Pide kitchen will just keep cooking. Full plates out. Empty plates back. Small batches, experiments, forgotten favorites and whatever else we decide ought to come out of the kitchen that night.
It'll be dark outside. Harvest will be running full tilt. There should be stories from the fields, stories from the cabs, w**e moving around the room and probably a few stories created at the Harvest Table itself.
18 seats. Nearly 30 last bottles. One unpredictable table.

🌧️ THE RAINY COOL DAY SPECIAL — TONIGHT AT PIDE 🌧️

It’s been raining for a while, and it looks like we have more coming. But those of us at Pide decided there’s no reason a cool, gray, rainy day can’t turn into a great night.

So we came up with something that just seems right for a night like this:

THE RAINY COOL DAY PIDE — $12

French Onion · Mushrooms · Melted Cheese · Cracked Black Pepper

Deeply cooked onions, savory mushrooms, melted cheese and cracked black pepper. Warm, rich and comforting without being too heavy—the kind of food that just seems to taste better when it’s 60 degrees, gray outside and the rain keeps coming down.

And because this is Pide, we decided it needed the right w**e.

🍷 FORIS PINOT NOIR — $30 PER BOTTLE

Why Pinot Noir?

Mushrooms and Pinot Noir are natural partners. The earthy character of the w**e works beautifully with the mushrooms, while its fruit and acidity balance the richness of the melted cheese and deeply cooked onions. Then the cracked black pepper gives the whole pairing one more little push.

It’s a red w**e with enough character for a cool evening without being a big, heavy red.

🍷 THE HARVEST TABLE — TRADE YOUR DATE

Yes, you read that correctly.

For one evening, your date isn't the person you came with.

Your date is a bottle of w**e.

Nearly 30 lonely singles will be waiting on the rack—each one the last bottle of its lot, gathered from this year's w**e harvest at Pide.

Choose carefully. This is your date for the evening.

Naturally, you should get acquainted. Pour yourself a sample. How does your date look in a glass? How's the bouquet? Pleasing? And then comes that exciting first taste...

But don't settle too quickly.

Walk around. Talk. Share your date with friends while they share theirs with you. Taste something interesting? Meet its owner.

And if you discover that you like someone else's date better?

Trade.

If they're willing, of course.

No scorecards. No ratings. No trying to decide whether a w**e is properly dry, sweet, smooth or sophisticated. That's not what this night is about.

This night is about pure enjoyment—tasting, sharing, talking, laughing and trying to find that one special bottle you want to end the evening with.

And there are no second dates.

Every w**e is the last of its lot. When tonight is over, this particular collection will never exist again.

AND THEN THERE'S THE OTHER HARVEST...

The Pide kitchen has its own collection of lonely singles: ideas, ingredients, experiments and small quantities of things that never quite found their way onto the menu.

Throughout the evening, the creative chefs of the kitchen will keep disgorging limited-quantity dishes for the harvest table.
