This week’s appreciation post features our Al Pastor tacos topped with grilled pineapple, jicama and scallions. Al Pastor is a traditional central Mexican preparation for pork and the name roughly translates to “Shephard Style.” This Mexican technique thought to have been influenced by the cooking traditions of the Lebanese who immigrated to Mexico in the early 1900s.
