For Hispanic Heritage Month, Chef Hector Santiago is taking El Super Pan on a culinary trip through Latin America.
From September 15 through October 15, we are celebrating with special food and drinks inspired by Puerto Rico, Colombia, Venezuela, Peru, Mexico and beyond. Expect rotating mofongos, a shareable Bandeja and flavors that highlight the ingredients, techniques and traditions that make each stop distinct.

Travel has shaped the way Chef Hector Santiago cooks. Years spent exploring Latin America and the world introduced him to new ingredients, techniques and traditions that continue to influence his food today. Hispanic Heritage Month is a chance to share some of those influences through the places and flavors that have stayed with him.
If you have been following along, you already know Chef Hector Santiago has a new Bandeja for Hispanic Heritage Month.
The Bandeja is built as a trip through Latin America, with each dish representing a different stop through its ingredients, cooking traditions and flavors. Colombia gives you shrimp ceviche plazero and crisp corn empanadas. Venezuela offers tequeños filled with salty white cheese and served with guasacaca. Puerto Rico is represented by grilled chicken pinchos, right down to the piece of bread on the end of the skewer. (IYKYK) Mexico brings slow cooked carnitas. Chicharrones and plantain chips are there for “todo mundo.”
Priced at $40, this board is meant to give your table a trip throughout Latin America.

We start the trip in Colombia with shrimp ceviche plazero.
“Plazero” means plaza style or market style, referring to the kind of fresh, casual food associated with public markets and town plazas. Chef Hector’s version is a Colombian market style shrimp ceviche, built around bright, fresh seafood flavors.
It is a cool, refreshing start to the Bandeja before you move into the fried, grilled and slow cooked dishes on the board.
