Mofongo – History of a Puerto Rican Classic

Mofongo (or fufu to Cubans), is a dish that is usually made from boiled or fried, pulverized, unripe plantains(I decided to use semi ripe), though it is not uncommon to see it made with yuca. This starchy goodness serves as a base for which to add a variety of veggies and proteins. Popular ingredients include garlic, prawns, lobster, and bacon. This classic dish is popular comfort food for Puerto Ricans and other Caribbean countries.

The history of this dish is older than the slave trade that brought it to this part of the world. Originally from Western and Central Africa, the dish was made from pulverising any starchy plant. Yuca, plantain, yam, and cassava were often used. The consistency was like that of porridge. The food moved with the people forcefully pulled from their country, and even then preserved their culture.

Frejon. Guava. Tempeh. Tomatoes. Palm Oil. Garri.

‘Frejon (From Feijão, which is the Portuguese word for beans) is a traditionally whipped Honey Beans with Coconut Milk which is eaten especially during Holy Week by a selection of Christians, mostly Catholics, across the world.

This one of the things that fascinates me the most about the Foodways of the African Diaspora. If I had to narrow down the things I find fascinating. This would be one of them. Connectedness – of people, places and FOOD. Brazil. Nigeria. Connected. By slavery and freedom. In culture and cuisine. Like Carnivals. Connected, with thick tropical rainforests and love for football.

Countries where Frejon is popular include Brazil and Nigeria (especially among Yoruba who returned to Nigeria from Brazil at the abolition of the slave trade, and settled in what is known as the “Brazilian Quarters” in Lagos Island), and also Sierra Leone on Good Friday, or for functions such as weddings.

My interpretation of the Popular Guyanese dish “Metemgee” I did last week at with Coconut water broth instead of coconut milk, all local provisions, and of course Cassava (Yuca) & Plantains.

So what is it? Metemgee is a one-pot dish that consists of root vegetables such as sweet potatoes and cassava, dumplings and some kind of protein such as salt beef, salt or fried fish. It is all cooked in a savoury broth of coconut milk and spices until tender. It’s similar to Jamaica’s ‘rundown’ and ‘oildown’ from other Caribbean islands such as Grenada and Trinidad.

Origin of Metemgee
When the Africans were brought as slaves to Guyana, they added this tasteful dish to Guyana’s cuisine culture. The word Metemgee in the African Twi language is translated to “and plantains make it good”
