Poll Question: for Chef Gregory's BBQ smokehouse

Hello, neighbors! Starting tomorrow, we will be closed on Wednesdays, which is traditionally our tri-tip day. The barbecue crowd has spoken—last Wednesday, we had only one customer, and the week before that, just three customers. With sales dropping to $53 and $22 on past Wednesdays, it just doesn’t make sense to remain open.

To enhance your experience, we’ll be moving our tri-tip and brisket offerings to Thursdays instead.

Do you think this change will work for you?

1. Yes, I’ll definitely come for tri-tip or brisket on Thursdays!
2. I will miss Wednesday’s barbecue, but I’ll adjust.
3. I won’t be affected; I prefer other options.

Thank you for your feedback!

I also wanted to give you a heads-up that next week, I’ll be going in for surgery to fix a hernia, which means we’ll be closed for several days. If you’d like to stock up, now is the perfect time to place orders for our vacuum-packed, already cooked baby back ribs or tri-tip and beef ribs. These items are available by the entire rack or by the pound for the tri-tip.

Reheating is simple! If you’re familiar with sous vide, you’re in luck. For baby back ribs, here's a quick guide:

Let the vacuum-packed ribs sit on the counter for a couple of hours.
Bring a large pot of water to a boil, then turn off the heat.
Immerse the vacuum-sealed ribs in the water for 15-20 minutes.
Remove them from the water, cut open the bag, add some extra seasoning I provide, and enjoy with or without barbecue sauce!
For beef ribs, just follow the same steps. For the tri-tip, heat water to 140°F and let it sit with the vacuum-packed bag for 10 minutes before enjoying!

Remember, all vacuum-packed items need to be ordered at least one day in advance.

Thank you for your continued support, and we look forward to serving you soon!

Just a little update from chef gregory's barbecue Chef Gregory's BBQ smokehouse
A little construction going on outside. It's looking good. There's light at the end of the tunnel figure of speech however, we'll see what it brings. They're supposed to be done Friday which is tomorrow. So on Saturday We'll be open.

Sorry for the inconvenience folks, but it just isn't cost-effective to be open. I've been here all day today and i've had two people show up and ask if we were open. So at the moment, the juice isn't worth the squeeze. Okay, another gentleman just came by. So that makes three since eleven a m this morning.

Just another little progress update from today. Regarding paving it's looking really good!🍻

04/16/2025

Just another little view from the major construction today of the repaving of the streets. I spoke with one of the foremen yesterday who graduated at task at arrow high school in 09, he said that they should be finished with paving things thursday afternoon, and they guaranteed have to have this done before the tamale festival. But just another reason why we're closed again at the moment, just because this is truly detrimental to most all of our businesses down here. Truly sorry for the inconvenience, but it doesn't make any financial sense. Whatsoever to open the doors, they have.Maybe if we're lucky ten people show up the entire day.

Just a little update on the ECR project of repaving and grinding. And furthermore, reason why we are not open this week. CHEF GREGORY'S BBQ SMOKEHOUSE.But I must say it does look like it's moving along quite quickly. So maybe we could open Thursday or Friday. But right now, yeah, we're still on the shutdown mode to reopen on saturday.

This is a customer that came in today. And I asked him what he thought of the brisket that I had made since he's from austin, texas. And since I'm asking him permission to do this, my hand is covering the lens, this is completely live and you can totally tell that what he had to say took me completely by surprise. So just wait for it. It's only a few seconds long but give it about seven or eight seconds to get into the video.

Okay, so here is what the guy had to say. And it completely blew me away. So just hang with the video for a moment, because I gotta get permission from the gentleman in order to do this.It takes literally a few seconds, so hang in there and wait for it. He took me totally by surprise with what he had to say. I did not expect that whatsoever🍻

Chef gregory's BBQ smokehouse the best barbecue in slow county, according to about ninety percent of my customers from paso all the way down to arroyo grande.
