Honey mussels, winter squash, unagi & miso blanc. Mussels lightly steamed and then smoked over embers and glazed in a preserved truffle fudge. Pumpkin braised in a pumpkin seed ponzu. cooked in smoked eel skin tare. Oxidized white wine and mussel stock emulsified with fermented cream and butter.
