Bio
Xolo is more than a restaurant — it’s a living altar to Oaxaca, a celebration of ancestral knowledge, sacred ingredients, and cultural memory.
We are named after the Xoloitzcuintli, the guardian dog of Mesoamerican legend, a symbol of protection, passage, and spirit. In Oaxacan tradition, the Xolo guides souls across worlds — from past to present, from earth to sky.
At Xolo, we honor that guidance by bridging ancient traditions with modern Charleston — carrying stories across borders, one dish at a time.
We believe:
Corn is sacred — Each tortilla, tamal, and pancake is a prayer to the land, made from heirloom maize and nixtamalized with reverence.
Food is memory — Every mole, every salsa, every aroma tells a story of families, markets, and villages.
Culture is fluid — Just as the Pacific meets the coast of Oaxaca, Xolo meets Charleston’s Lowcountry, sharing values of craft, seasonality, and soul.
Hospitality is heritage — We welcome every guest like family, with warmth and intention, honoring the Oaxacan spirit of community.
Xolo is a promise:
To serve not just food, but meaning.
To celebrate not just taste, but tradition.
To nourish not just bodies, but stories.
“Guided by the spirit of the Xolo, we bring the heart of Oaxaca to Charleston — through corn, craft, and community.”
We are excited. Our bellies are rumbling.
